- In a large skillet, melt 1 tablespoon butter.
- Add nuts and stir for 3 minutes or until golden brown.
- Place nuts in a bowl and set aside.
- Melt 1 tablespoon butter in same skillet.
- Add brussels sprouts; stir 1 minutes.
- Add broth; cover and simmer on medium heat for about 7 minutes or until Brussels sprouts are almost tender.
- Uncover and simmer until broth evaporates.
- Using a wooden spoon, push Brussels sprouts to the sides of the skillet.
- Melt 1 tablespoon butter in the center of the skillet.
- Add shallots; cook stirring frequently until tender.
- Stir in marjoram and cream.
- Simmer until sprouts are coated with cream, stirring frequently.
- Season with salt and pepper.
- Add half of pine nuts and mix well.
- Transfer Brussels sprouts to serving dish.
- Sprinkle with remaining pine nuts.

Melt 1 tablespoon butter in same skillet over medium heat. Add sprouts; stir 1 minute. Add broth; cover and simmer until sprouts are almost tender, about 7 minutes. PASTA WITH BACON, CHEESE, LEMON AND PINE NUTS

This one starts out small -- pasta with butter and cheese -- but can be expanded with pine nuts, lemon zest, brown butter, bacon and herbs into something satisfying. This kind of "modular" meal, which everyone at the table can add to or subtract from, is a great family dinner solution. You prepare one tasty base element, like warm tortillas or pasta or salad greens. After that, it's about piling on -- or politely passing on -- all the garnishes at the table.

- Put a large pot of salted water on to boil. Put the cheese, herbs and red pepper flakes on the table. Zest the lemon and put the zest on the table in a small serving bowl. Cut the lemon in half.
- Put bacon in a medium-size heavy pot and turn the heat on low. Cook, turning occasionally, until fat has rendered and bacon is chewy-crisp, about 10 minutes. Lift out bacon pieces and drain on a plate lined with paper towels. Keep warm on top of the stove.
- When the water boils, add pasta, stir well and cover. When the water comes back to the boil, uncover and stir again.
- Put 4 tablespoons butter in a small saucepan and melt it over medium-low heat. When it foams, throw in the pine nuts and cook, shaking the pan, until they turn brown and toasty. Turn off heat and squeeze the lemon into the pan, cupping your hand underneath to catch any pits. Stir and set aside. Transfer bacon to a serving bowl and place on the table.
- As soon as the pasta is tender (it will cook a bit more later on), drain it, reserving a cup of the cooking water. Immediately return the pasta to the pan over low heat. Toss in a chunk of butter. Add a splash of cooking water and a pinch of salt, stir well, cover and let rest 1 minute. Taste and adjust the seasonings until the pasta is completely cooked and tasty (but plain).
- For those who like plain pasta or pasta with just butter and cheese, set aside a good amount in serving bowls. For others, pour the pine nuts and butter into the pasta remaining in the pot, add another splash of cooking water, and toss to combine. Serve from the pot or in a serving bowl, passing the various toppings.

- Bring a large pot of salted water to a boil to prep the pasta. Slice the brussels sprouts into shreds and then do the same with the kale leaves.
- Heat a large skillet over medium-low heat. Add the butter and olive oil. Once melted, add the shallot with a pinch of salt and pepper. Cook, stirring occasionally, until the shallot softens, about 5 minutes. Stir in the shredded brussels sprouts and kale. Add another pinch of salt and pepper. At this point, your water is probably boiling and you can cook the pasta according to the directions.
- Cook, stirring often, until the brussels and kale soften, about 6 to 8 minutes. Stir in the garlic and cook for 5 minutes more.
- To toast the pine nuts, place them in a dry skillet and heat over medium- low heat. Stir frequently with a wooden spoon until the nuts toast, about 4 to 5 minutes. Keep an eye on them as they can burn quickly!

- Heat a large stockpot of generously-salted water until boiling. Add the pasta (about 5 minutes before you begin sautéing the Brussels, see below) and cook the pasta until it is 1 minute shy of al dente.
- Heat 1 tablespoon of the butter in a large sauté pan over medium-high heat. Add the shredded Brussels sprouts and garlic, and season with salt and lots of black pepper. Sauté for 2 minutes, stirring occasionally. Continue with step 3, or if the pasta is not yet ready, briefly remove the sauté pan from the burner until the pasta is ready to go.
- Once the pasta is ready, use a spider strainer to transfer the pasta into the sauté pan with the Brussels. Add in the remaining 2 tablespoons of butter, 1/2 cup of the starchy pasta water, and sprinkle the Parmesan evenly over the top of the pasta. Remove the sauté pan from the heat. Then toss the pasta with the Brussels and cheese for about 1 minute, or until the cheese has melted evenly into a silky sauce and the pasta is cooked to al dente. If the sauce seems too dry, add in 1/4 cup of additional pasta water at a time until the right consistency is reached.
