Steps:

  • Place beans and water in a saucepan. Bring to a boil; cook, uncovered, for 7 minutes or until crisp-tender. Drain; add the remaining ingredients. Cover and cook for 4 minutes or until vegetables are tender.

1 garlic clove, minced

1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil

Basil Lemon Green Beans image

Steps:

  • In a large skillet heat the oil over medium-high heat until hot.
  • Add the garlic and saute and saute 30 seconds.
  • Add beans and yellow pepper; saute 3 to 5 minutes or until beans are crisp-tender.
  • Add the basil, honey, lemon zest, salt and pepper; saute 30 seconds.
  • Add the lemon juice and saute another 30 seconds.
  • Serve immediately.

2 teaspoons olive oil
1 clove garlic, mined
1 1/2 lbs green beans, ends trimmed and broken into 1 inch lengths
1/3 cup basil, coarse chopped
1/2 teaspoon honey
1/2 teaspoon grated lemon, zest of
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons fresh lemon juice
1/2 medium yellow bell pepper, cut into thin strips

Green Beans with Lemon and Garlic image

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

  • Bring a large pot of well-salted water to a boil. Cook green beans 3 minutes until barely tender and only halfway cooked. Drain into a colander and set aside.
  • In the same pot over high heat, melt the butter. Add green beans, lemon zest, salt and pepper (to taste). Sauté for 3 to 4 minutes, until beans are tender-crisp. Remove from heat, toss with basil and serve immediately.
