- Mix first 4 ingredients; gradually stir in 1 tablespoon oil (mixture will be crumbly). Rub over both sides of pork chops., In a large skillet, heat remaining oil over medium heat; cook chops until a thermometer reads 145°, 4-6 minutes per side. Let stand 5 minutes before serving.

Steps:
- Toss the pork chops with the lime juice in a bowl until evenly covered. Toss with garlic and basil. Season the chops to taste with salt and pepper. Set aside to marinate for 30 minutes.
- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Cook the pork chops on the preheated grill until no longer pink in the center, 5 to 10 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

VEAL CHOPS WITH TOMATO-ORANGE-BASIL SAUCE
Steps:
- Combine first 3 ingredients and 1 tablespoon orange peel in heavy small saucepan. Boil until mixture is reduced to 3 tablespoons, about 10 minutes. Add cream and boil 1 minute. Set sauce aside. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Melt 1 tablespoon butter in heavy large skillet over medium heat. Season veal with salt and pepper. Sauté veal until just cooked through, about 4 minutes per side. Transfer to plates; keep warm.
- Reheat sauce over low heat. Whisk in remaining 4 tablespoons butter. Stir in tomato, sliced basil and remaining 1 tablespoon orange peel. Season to taste with salt and pepper. Ladle sauce over veal. Garnish with basil sprigs if desired.
BASIL ORANGE CHICKEN
A simple marinade that makes a wonderfully flavorful and moist chicken. Alternately you can grill the chicken after it marinates. Time does not include marinating.

- Rinse the chicken and pat dry. Place in a sealable plastic food storage bag.
- Pour a mixture of the orange juice, canola oil, honey and basil over the chicken, tossing to coat; seal tightly.
- Marinate in the refrigerator for 6 to 8 hours, tossing occasionally. Drain, reserving the marinade.
- Brown the chicken on both sides in the vegetable oil in a skillet; drain. Arrange the chicken in a glass baking dish. Pour the reserved marinade over the chicken.
- Bake at 350 degrees for 25 minutes or until tender. Serve hot or cold.
