KALIMOTXO (CALIMOCHO)

When I was living in the Basque region of Spain, this was a traditional drink served everywhere. It is pronounced 'Cali-mot-cho' and is traditionally served over ice with a slice of lemon.

  • Fill a tall glass with ice cubes. Pour in red wine and cola; garnish with a slice of lemon.

Steps:

  • Soak the lemon peel in the water for 24 hours.
  • Add the sugar and both types of wine to the water.
  • Add in the sliced lemons and chill before serving.

Steps:

  • In a small saucepan, combine sugar and 1 cup water. Bring to boil and stir to dissolve sugar. Allow to cool to room temperature, then cover and refrigerate until chilled.
  • Remove seeds from lemon juice, but leave pulp. In pitcher, stir together chilled syrup, lemon juice and remaining 7 cups water.

I tweaked this recipe it to make a refreshing drink. I love basil and this recipe has a wonderful basil-infused flavor. Delicious on a warm day or with grilled chicken. Serve over ice and garnish with fresh basil and lemon slices.

Steps:

  • Stir water, lemonade, sugar, and lime juice together in a pitcher. Add 1/2 cup basil leaves, stir to combine, cover the pitcher, and refrigerate until flavors combine, 8 hours to overnight. Remove basil leaves and discard.
