These come from a restaurant in my home town. My best friend was a cook there and so........Just remember the cheaper the meat you use the longer you'll need to marinade it.

Steps:

  • Mix all ingredients adding just enough milk to make the consistency of pancake batter.
  • Place in gallon size ziplock with steak pieces.
  • Marinade in fridge for no less than 2 hours.
  • Deep fry till golden brown.

Steps:

  • Season steak with a pinch of salt and pepper, then cut steak into bite-size pieces.
  • In a large bowl, combine all batter ingredients. Whisk until all ingredients are mixed through.
  • Preheat about an inch (2 cm) of oil to 350˚F (180˚C) into a heavy, high-sided skillet or pan.
  • In a medium bowl, add flour and salt. Place steak into the flour, then batter, and then into the flour again.
  • Lower the steak bites into the hot oil, being careful not to overcrowd the pan.
  • Cook each side for 4 minutes or until golden brown.
  • Transfer it onto a drying rack and season with salt.
  • Discard the oil on the pan, but leave some oil for the gravy. In the same bowl, add flour, milk, and salt, and mix until thicken.
  • Dip the steaks into the gravy.
  • Enjoy!

  • Beat together the egg, buttermilk, grill seasoning, and 1/2 cup of flour in a large bowl until smooth. Add the beef, and toss until well coated. Cover with plastic wrap, and place into the refrigerator to marinate at least 2 hours.
  • Sift 2 1/2 cups flour with the garlic powder, salt, and pepper into a large bowl. Remove steak strips from buttermilk batter and allow excess to drip off. Dredge each piece with seasoned flour and place onto a baking sheet. Place in the freezer and freeze until firm, 1 hour to overnight.
  • Heat oil to 370 degrees F (185 degrees C) in a deep fryer or cast iron skillet.
  • Drop a few frozen steak pieces into the hot oil and fry until golden brown on the outside, about 5 minutes. Do not overcrowd the frying oil, and do not allow the steak strips to thaw before they are fried. Once golden brown, remove to drain on a paper towel-lined plate.

Steps:

  • Trim off the excess fat from the meat, and then cut strips less than 1-inch wide. Rotate the meat and cut into small bite-size pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.
  • Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings.
  • Next, turn on your ventilation fan-you'll need it! Heat the skillet over medium-high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, and then get very brown, before you add the meat.
  • Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30 to 45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.
  • Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

  • In a large heavy-bottomed stockpot, heat the peanut oil to 350 degrees. In a large bowl mix the sifted flour with salt and pepper. In another large bowl mix the eggs, beer, and buttermilk. Slice the steak into thin 1-inch pieces and then place them in the flour first, then the beer mixture and then back into the flour. Heat a heavy flat bottomed stainless skillet over medium high heat and add 1 tablespoon of butter. When the butter has melted, swirl to coat the pan. Add about a third of the meat and spread it across the pan.
  • Cook for 1 minute and then use a large spatula to flip the pieces over. Cook 1 more minute. Use a spatula to remove the meat to a plate and then repeat with a second batch of meat pieces. Add an additional tablespoon butter to the skillet. The entire cooking process for the meat should only take a few minutes total. When the meat has finished cooking, loosely tent foil over the cooked steak bites on the plate.
  • Add the remaining 2 tablespoons of butter to the hot skillet and toss the mushrooms in the butter. Sprinkle with the remaining salt and let the mushrooms cook without stirring for 2-3 minutes, until browned. Stir and let cook a few more minutes until soft. Add the mushrooms and the buttery pan drippings to the plate with the steak bites. Serve hot. Enjoy!
