Beefy Swiss Bundles image

Steps:

  • In a large skillet, cook the beef, mushrooms and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in Worcestershire sauce and seasonings. Remove from the heat; set aside., On a lightly floured surface, roll puff pastry into a 15x13-in. rectangle. Cut into four 7-1/2x6-1/2-in. rectangles. Place about 2 tablespoons potatoes over each rectangle; spread to within 1 in. of edges. Top each with 3/4 cup beef mixture; sprinkle with 1/4 cup cheese., Beat egg and water; brush some over pastry edges. Bring opposite corners of pastry over each bundle; pinch seams to seal. Transfer to a greased baking sheet; brush with remaining egg mixture. Bake at 400° for 17-20 minutes or until golden brown. Freeze option: Freeze unbaked pastries on a waxed paper-lined baking sheet until firm. Transfer to an airtight container; return to freezer. To use, bake pastries on a parchment-lined baking sheet in a preheated 400° oven 20-25 minutes or until golden brown and heated through.

  • In a large skillet, bring 1 in. of water to a boil. Add asparagus; cover and cook for 3 minutes. Drain and immediately place in ice water. Steps:

  • Bring a pot of water to a boil. Drop asparagus into boiling water and cook for 2 minutes; drain. Immediately plunge asparagus into a bowl of iced water.
  • Mix cream cheese, horseradish, parsley, and chopped chives in a bowl. Lay thinly sliced beef onto a large sheet of waxed paper. Spread cream cheese mixture over each roast beef slice. Place one asparagus spear onto each slice so the tip overlaps an edge. Roll beef slice around the the asparagus. Secure by tying a chive around the wrapped asparagus.
  • Arrange rolls on a plate and cover with plastic wrap; refrigerate at least 30 minutes.

Steps:

  • For pesto, in a food processor, combine 3 tablespoons oil, basil, parsley, Parmesan cheese, and salt. Cover and process until smooth; set aside.
  • In a large skillet, brown steaks in 2 tablespoons of butter and remaining oil for 5-6 minutes on each side. Remove and keep warm. In the same skillet, saute mushrooms until liquid is gone.
  • Cut each pastry sheet into an 8 inch sqare. Place a steak on each square. Spread steak with about 1 tablespoon of pesto; top with mushrooms.
  • Bring opposite corners of pastry over steak and pinch seams together tightly. Place in a greased 15-in x 10-in baking pan, brush egg over pastry.
  • Bake at 450 degrees for 18-20 minutes or until golden brown. Let stand before serving.
  • For gravy: melt remaining butter in the same skillet; stir in flour until smooth. Gradually stir in the remaining ingredients. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with beef bundles.
