Steps:

  • In 10-inch cast-iron or nonstick skillet, cook beef and onions over medium-high heat 6 to 8 minutes, stirring occasionally, until beef is brown; drain. Decrease heat to medium. Stir in taco seasoning mix, red pepper and chiles. Cook 1 to 2 minutes longer or until slightly thickened. Remove from heat; spread beef mixture into even layer.
  • Meanwhile, in large microwavable bowl, mix cheeses and milk. Microwave uncovered on High 4 minutes; stir, then microwave in 30-second intervals until cheese melts and mixture is easily stirred smooth. Pour over beef mixture in skillet. Top with tomato, green onions and cilantro. Serve with tortilla chips.

BEEF CON QUESO DIP

This meaty snack really hits the spot on chilly days. It's a tradition to serve the dip with tortilla chips, but I also like it with homemade soft pretzels.

SAUSAGE CON QUESO DIP

This appetizer can be as made hot as you like it by adjusting the number of peppers. I have never taken it anywhere without being asked for the recipe. I serve it in a small crock pot to keep it warm. This makes a large amount and it freezes well. I hope you enjoy it!

  • Add cooked ground beef, diced tomatoes, Velveeta cheese, cream cheese, Gouda, jalapeno, and cilantro to an oven-safe dish.
  • Drizzle some of the half-and-half on top (don't use all of it, save some to adjust for thickness later).
  • Bake uncovered in the preheated oven for 20 minutes. Remove from oven to stir and adjust thickness with half-and-half as needed. Return to the oven and continue to cook until cheese is bubbly, about 15 more minutes.

  • Start by searing your steak. We love to sous vide our steak, but a simple sear to 145 degrees F to cook your steak to medium rare doneness works fine for this recipe. Let your steak rest while you make the queso. This will help to keep the juices in the steak.
  • To start making the queso dip, begin by melting butter in a stock pot on medium heat, and add minced garlic when the butter is melted.
  • When the garlic has cooked for a minute add in your chopped roma tomatoes and canned green chilis and cook for two minutes.
  • When the tomatoes and chilis have warmed it’s time to add in cubed American cheese and half and half. As a tip we slowly incorporate the cheese to allow it to melt smooth without clumping.
