CAJUN CORN SOUP
I found this recipe years ago and substituted Cajun stewed tomatoes for a bolder taste. Now I prepare this dish for out-of-state guests who want to taste some Cajun food. Everyone who tries it gives it high marks. Plus, it's easy to prepare. -Sue Fontenot, Kinder, Louisiana

Steps:
- In a Dutch oven, saute the onion, green pepper and green onions in oil for 5-6 minutes or until tender. Stir in flour and cook until bubbly. Gradually add water; bring to a boil. Add the corn, sausage, ham, tomatoes, tomato paste, cayenne, salt and pepper sauce., Reduce heat; simmer, uncovered, for 1 hour, stirring occasionally.

I found this recipe a few years back in an Southern Living magazine. But since I like my a little spicier I added the Cajun style tomatoes. Now when my extended family comes from up north to what they call "Cajun" country I fix this for them.

- 1. In a large boiler, saute the onion, green pepper and green onions in oil for 5 minutes or until tender.
- 2. Stir in flour and cook until bubbly. Gradually add the water and bring to a boil.
- 3. Add the corn, sausage, ham, tomatoes, tomato paste, cayenne pepper, salt and pepper sauce; return to a boil. Reduce heat; simmer, uncovered, for 1 hour, stirring occasionally.

- In a heavy 8-qt. Dutch oven or soup kettle, combine oil and flour until smooth. Cook over medium-high heat for 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir about 5 minutes more or until mixture is reddish-brown (the color of a penny). Add onion and green onions. Cook for 5 minutes, stirring often. , Increase heat to high. Add hot water or broth, tomatoes and corn. Bring to boil. Reduce heat; cover and simmer for 15 minutes. Add shrimp; simmer for 5 minutes or until shrimp turn pink. Season to taste with salt and pepper.

- 1. Remove casings (skin covering) from sausage. In a large cast iron, or non-stick cooking pot, add chopped onion, minced garlic and sausage. Cook until sausage is done. Add all other ingredients. Cook for about 30 minutes, or until potatoes are done. Enjoy!
- 2. Note: I like mine pretty spicy, but it is the kind of spicy that also comes with a lot of flavor as well. If you can't take the heat, than I strongly suggest substituting one of the cans of Original Rotel with the Mild version. If you find it still too spicy, than use plain turkey sausage (lean if possible) rather than Hot turkey sausage.
- 3. For those who want to reduce the caloric value. Hot Italian turkey sausage and low sodium chicken broth can be used as a substitute. Tastes just as good.

- Split the sausage lengthwise into fourths and then slice. Heat the olive oil over medium high heat in a stockpot. Add the sausage to the pot and cook for 3 -4 minutes until lightly browned.
- Add the onion and garlic and cook until tender.
- Add diced tomatoes with their liquid, to the sausage mixture; add the sugar and bring to a boil. Boil for 3 minutes.
- Add the salt, pepper, basil, parsley and Cajun seasoning; stir and add corn and water. Bring to a boil, reduce heat and simmer, uncovered, for 15 minutes.
- Homemade Cajun seasoning:.
- Mix all ingredients in a glass jar and store in the refrigerator. Shake the jar before using.
