- In a large skillet, melt butter over medium heat. Add garlic; cook and stir 1 minute. Stir in cream cheese until melted. Gradually add cream. Bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 3-5 minutes. Stir in Parmesan cheese and pepper. Serve over pasta. If desired, garnish with parsley and additional Parmesan cheese.

- For the sauce: Heat olive oil in a pan over medium heat. Add red onion and sauté for 1-2 minutes. Add the sliced mushrooms and sauté for another 2-3 minutes. Season with salt.
- Add white wine and cream to deglaze the mushrooms. Let simmer for 5 minutes.
- For the burgers: Cook patties on the BBQ or stovetop until cooked through and toast the buns.
- Slice the figs.
- Top the patties with mushroom sauce and sliced fig and place in the buns.

- In a bowl, combine the milk, Worcestershire sauce, bread crumbs, 1/2 teaspoon salt, pepper and garlic powder. Crumble beef over mixture and mix well. Shape into three or four oval patties. In a large skillet, cook patties over medium heat until no longer pink. , In another skillet, saute mushrooms and basil in 2 tablespoons butter until tender; drain. Remove mushrooms with a slotted spoon and set aside. , In the same skillet, melt the remaining butter; stir in flour until smooth. - In a medium bowl, mix together beef, cheese, egg yolks, salt and pepper and form into 6 patties.
- Heat 2 tbls butter in a heavy skillet over medium high heat, brown patties on both sides, reduce heat to medium and cook until juices are pink.

- Add oil, 1 tbls butter and onion to the pan and cook over medium heat until onion is golden brown.

- Cook the onions slowly in butter for about 10 minutes or until very soft but not browned. Place in mixing bowl and add beef, softened butter, salt, pepper, thyme and egg. Blend thoroughly and form into patties.
- Roll patties in flour and shake off excess. Heat butter and oil over moderately high heat. When the foam has begun to subside, it is hot enough to add the patties.
- Add patties in single layer and sauté for 3 minutes or per side depending on how well done you want them. Move them to serving platters and keep warm.
- For sauce: pour the fat off of the skillet and add the stock. Boil it down rapidly, scraping up the bits from the pan, until almost a syrup consistency. Add the cream and boil it down for a minute or two until reduced and thickened. Season with salt and pepper. Serve over the burgers.

- Shape beef into 6 oval patties. Melt butter in large skillet and add oil. Heat until foaming. Add green onions and saute until softened; stir in garlic and saute for 30 seconds. Add beef patties and cook to desired degree of doneness. Season with salt and pepper. Set beef patties aside to keep warm on a hot platter.
- In same skillet, saute mushrooms until limp and add to the warm beef patties.
- To prepare Mustard Cream Sauce, deglaze pan with dry white wine. Reduce volume by half. Add Dijon mustard, heavy cream, tomatoand capers. Heat slowly until hot but do not boil.
- Pour Mustard Cream Sauce over beef and mushrooms. Sprinkle parsley over top to garnish, if desired.
- Good served over hot buttered noodles.

- In dutch oven slowly brown meat on all sides in hot shortening.
- Season generously with salt and pepper.
- Add water; cover and simmer (not boil) for about 3 hours or until meat is very tender.
- Remove meat from dutch oven and allow to stand 20 minutes, then slice thinly.
- Save pan juices for another use.
- Cream Sauce: Heat butter in saucepan until it bubbles and browns very slightly.
- Add cream, garlic, lemon juice, salt and pepper.
- Cook over medium heat about 3 minutes.
- Spoon half of the sauce in a glass, heat proof 9x12 cake pan or casserole dish.
- Arrange meat slices, overlapping in the sauce.
- Pour remaining sauce over the top.
- Refrigerate until ready to serve.
- I usually make this the day before and refrigerate to allow all of the flavors to blend with the meat.
- When ready to prepare, allow dish to set out for about 30 minutes while oven is heating to 350°F It usually takes 20-35 minutes to heat through.
