- In a small bowl, combine the first six ingredients. Stir in enough buttermilk to achieve desired consistency. Stir in blue cheese. Cover and store in the refrigerator. Serve with salad greens.

BUTTERMILK BLUE CHEESE DRESSING
This is an awesome, simple recipe, can be used as a vegetable dip, salad dressing, or my husband loves it on Buffalo wings. Best to make and store in the fridge overnight to let the flavors meld. Garlic salt can be used in place of the garlic powder.

BLUE CHEESE BEEF TENDERLOIN
This is a recipe for whole beef tenderloin baked and topped with a blue cheese sauce.

- Place beef in a shallow dish. Combine teriyaki sauce, red wine and garlic; pour over beef. Allow beef to marinate in refrigerator for 30 minutes.
- Preheat oven to 450 degrees F (230 degrees C).
- Place tenderloin on broiler pan, and cook in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C), and cook for 30 to 40 more minutes, or to desired doneness. Allow to set for 10 minutes before slicing.
- In a saucepan over low heat, combine blue cheese, mayonnaise, sour cream and Worcestershire sauce. Stir until smooth; serve over sliced tenderloin.

- If desired, tie tenderloin with bakers twine. In a shallow dish, combine soy sauce and Worcestershire sauce; add the beef and turn to coat. Cover; refrigerate for 2 hours, turning occasionally., Drain beef, discarding marinade. Rub the beef with garlic and pepper; place in a shallow roasting pan. Add broth to the pan. Bake, uncovered, at 425° for 45-55 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes and remove twine before slicing., Meanwhile, in a small saucepan, saute mushrooms in butter until tender. Add garlic; cook 1 minute longer. Add the cheese, Worcestershire sauce and caraway seeds; cook and stir over low heat until cheese is melted. Stir in onions; heat through. Serve sauce with beef.

MAYTAG BLUE CHEESE SALAD DRESSING
This is from Kincaids Restaurant in Redondo Beach, Ca. When I tried it at the restaurant, I had to have the recipe, which I found on the web. It is the best blue cheese salad dressing ever !!! The Maytag Blue Cheese is so creamy and delicious, like no other. It's not cheap, but worth every dime if you can find it. If you can't find it, you can substitute Danish Blue Cheese, or your personal favorite. It should be refrigerated overnight. I'm guessing on the servings amount, it makes about 1-1/2 cups. Serve it over iceberg lettuce wedges with your choice of other veggies, i.e tomatoes, cucumbers, etc. and I hope you enjoy it as much as we do !!!

- Make the blue cheese butter. Combine butter and blue cheese in a small bowl and mix until well combined. Spoon onto a piece of wax or parchment paper. Wrap an edge over the mixture then form an 8” log in between the two sheets of paper; wrap the remaining paper around the butter, then twist the ends to secure. Chill at least 2 hours.
- Prepare the tenderloin. Trim any visible silverskin or large exterior fat deposits. Fold the tapered end under and secure with twine. Divide the tenderloin into two equally sized pieces, then secure each along the length with twine, spaced approximately 1” apart. Rest 1-2 hours to allow the tenderloins to come to room temperature.
- When you're ready to cook, heat the oven to 425°F. Season all sides of both roasts with salt and pepper.
- Heat a cast iron skillet over medium-high or high heat and wait until nearly smoking. Add 1 tbsp olive oil, then swirl to coat the bottom of the pan. Place the prepared tenderloins into the pan and sear until a good crust forms, approximately 3-4 minutes. Use tongs to rotate the roasts one-quarter of a turn, then sear again for 3-4 minutes. Rotate one final time and sear the third side. Finally, position the roasts on the un-seared side and transfer the skillet to the oven.
