BEER BATTER FISH MADE GREAT

This is a great beer batter fish recipe, and is very easy to do. We often fish all day with friends, and then cook the fish afterwards out on deck. Yummy and great!

Beer Batter Fish Made Great image

Steps:

  • Heat oil in a deep fryer to 365 degrees F (185 degrees C). Rinse fish, pat dry, and season with salt and pepper.
  • Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients. Gradually mix in beer until a thin batter is formed. You should be able to see the fish through the batter after it has been dipped.
  • Dip fish fillets into the batter, then drop one at a time into hot oil. Fry fish, turning once, until both sides are golden brown. Drain on paper towels, and serve warm.

  • For the yoghurt tartare, combine all of the ingredients in a small bowl and season to taste. Keep cold while you prepare the fish.
  • Place the flour and salt in a large bowl. Gradually pour the cold beer into the flour mixing it as you go. I use chopsticks to stir it but fork or whisk would work well too. Some lumps are totally fine. Dust the fish fillets in some extra flour, shaking off excess and set aside.
  • Pour enough vegetable oil into a deep sided pan to come up the sides to 2.5cm. Heat the oil over a medium-high heat. It is ready to use when a little of the batter sizzles as soon as it is dropped into the oil or when it reaches 180 degrees Celsius on a thermometer.
  • Dip the fillets into the batter, working with just a few at a time, allowing any excess batter to drip off. Fry the fish in the hot oil in batches for 3-4 minutes or until golden and cooked through, turning them half way. Drain on a wire rack or absorbent paper. Season with a little sea salt.
