ITALIAN SAUSAGE WITH PEPPERS, ONIONS AND BEER

I found this yummy recipe on Allrecipes and have been making it for about two years. Italian sausage is simmered in beer with bell peppers and red onions.

Italian Sausage With Peppers, Onions and Beer image

Steps:

  • Heat olive oil in a large heavy skillet over medium high heat. Cook sausage until browned on all sides. Remove sausage from pan, and set aside.
  • Pour in 1 can of beer to deglaze the pan, scraping up any blackened bits from the bottom. Place the red peppers, green peppers, onions and garlic in the pan. Stir in the remaining beer and the tomato paste. Season with oregano, cilantro, hot sauce, salt and pepper. Cover and simmer until onions and peppers are tender.
  • Slice the sausage into bite size pieces and add to the skillet. Cover and simmer until sausage is cooked through.

3 red bell peppers, sliced
2 green bell peppers, sliced
2 large red onions, sliced
3 garlic cloves, chopped
2 (12 ounce) cans beer
1 (6 ounce) can tomato paste
3 tablespoons chopped fresh oregano

Steps:

  • Preheat an outdoor grill for medium-high heat. When hot, lightly oil grate.
  • Combine the beer and onions in a large pot; bring to a boil. Submerge the bratwurst in the beer; add the red pepper flakes, garlic powder, salt, and pepper. Reduce heat to medium and cook another 10 to 12 minutes. Remove the bratwurst from the beer mixture; reduce heat to low, and continue cooking the onions.
  • Cook the bratwurst on the preheated grill, turning once, 5 to 10 minutes. Serve with the beer mixture as a topping or side.

  • Pour the beer into a large pot, and bring to a boil over medium heat. Layer the potatoes into the bottom of the pot, and sprinkle a little Italian seasoning, salt, and black pepper over the potatoes. Layer the baby carrots, onion, smoked sausage, and cabbage, sprinkling every layer with a bit more of the Italian seasonings, salt, and pepper. Turn heat to low, cover the pot, and simmer until the vegetables are tender, about 45 minutes.

Steps:

  • Combine oil, vinegar, parsley, oregano, garlic, salt and pepper in a small bowl. Place sausages, onion and peppers in large resealable plastic food storage bag; pour oil mixture into bag. Close bag securely, turning to coat. Marinate in refrigerator 1-2 hours.
  • Mix all ingredients for Horseradish-Mustard spread in a small bowl. Set aside.
  • Prepare grill for direct cooking.
  • Drain sausages, onion and bell pepper; reserve marinade.

  • 1 Prepare charcoal fire for direct-heat cooking, pierce sausages in several places with a fork. Set aside. Pour beer into a Dutch oven or deep skillet: heat to a boil over high heat. Steps:

  • In a small bowl, combine the first six ingredients. Pour 1-3/4 cups into a large resealable plastic bag; add bratwurst. Seal bag and turn to coat; refrigerate for 4 hours or overnight. Cover and refrigerate remaining marinade. , Add onion to remaining marinade; toss to coat. Place on a double thickness of heavy-duty foil (about 18 in. square). Fold foil around onion mixture and seal tightly.
