Steps:
- Whisk eggs, cinnamon, vanilla and milk together in medium-large bowl to create egg wash.
- Dunk bread in egg wash.
- Melt butter in a skillet on medium-low heat and cook bread for 2-3 minutes.
- Mix berries, sugar, and lemon juice in medium pan over low heat crushing and stirring berries until they form a thick sauce.
- Lay out slices and spread compote in between each slice then on top. Garnish with confectioners sugar (optional).
- Enjoy!

TRIPLE BERRY FRENCH TOAST
This triple berry French toast is a Christmas brunch tradition at our house and perfect for a busy household on Christmas morning as it is prepared the night before. You can use blueberries, blackberries, raspberries, or a combination. Twist a lemon slice over the top for garnish.

Steps:
- Spray the bottom of a 9x13-inch glass baking dish with vegetable spray and place 1/2 of the bread cubes into the dish. Put cream cheese cubes on top. Distribute blueberries, blackberries, and raspberries over the cream cheese. Place remaining bread over the berries.
- Beat eggs in a bowl and add milk and maple syrup. Pour mixture over bread. Place plastic wrap over the dish and refrigerate, 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Remove plastic wrap from the dish and cover the dish with aluminum foil.
- Bake in the middle of the preheated oven for 30 minutes. Remove the foil and continue to bake until puffed and golden, about 30 minutes more.
- While toast is baking, combine 1/2 of the blueberries, 1/2 of the blackberries, 1/2 of the raspberries, water, sugar, and cornstarch in a saucepan over medium-low heat. Cook until syrup thickens, 5 to 7 minutes. Stir in remaining berries and butter.
- Let French toast sit for about 10 minutes before slicing. Pour berry syrup over individual pieces.

- For syrup, combine raspberries, brown sugar, butter and cinnamon in a saucepan. Bring to a boil. Reduce heat; simmer, uncovered, until syrup reaches desired consistency, 5-7 minutes. Remove from the heat and stir in vanilla; set aside. , In a bowl, beat cream cheese and sour cream. Spread about 3 tablespoons on each slice of bread. Combine preserves and vanilla; spread over cream cheese mixture on nine slices. Top with remaining bread, cream cheese side down, to make a sandwich. , In a shallow bowl, combine the eggs, cream and cinnamon. Dip both sides of bread into egg mixture. Cook on a hot greased griddle until golden brown, 3-4 minutes on each side. , Cut in half diagonally. Serve with raspberry syrup. If desired, sprinkle with confectioners' sugar and garnish with raspberries.

Had this mixed berry French toast recently at a brunch and it is absolutely the best French toast I've ever had--perfect for a holiday breakfast or brunch.

- Coat a 9x13-inch pan with cooking spray. Layer 1/2 of the bread in the pan.
- Beat cream cheese and sugar together with an electric mixer until creamy. Drop by teaspoonfuls over the bread. Layer mixed berries on top; layer on remaining bread. Sprinkle with cinnamon.
- Mix eggs, milk, maple syrup, butter, and vanilla extract together in a bowl and pour over bread. Press with a spatula to soak up mixture. Cover and refrigerate, 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until golden and set, 45 to 50 minutes.

- Add 1/2 cup old-fashioned oats and 1 cup water into a large microwaveable bowl.
- Cook in microwave on 50% power for 6 minutes.
- Place frozen berries in small bowl and defrost in microwave until the juice from the berries is released (it takes about 50 seconds on mine).
- Add defrosted berries(+ juice), sugar free syrup, butter spray, and flax seed together and stir well.
