SLOW-COOKER BERRY COBBLER

I adapted my mom's yummy cobbler recipe for slow cooking. With the hot summers here in Arizona, we can still enjoy this comforting dessert, and I don't have to turn on the oven. -Karen Jarocki, Yuma, Arizona

Slow-Cooker Berry Cobbler image

Steps:

  • Whisk together 1 cup flour, 2 tablespoons sugar, baking powder and cinnamon. In another bowl, whisk together egg, milk and oil; add to dry ingredients, stirring just until moistened (batter will be thick). Spread onto bottom of a 5-qt. slow cooker coated with cooking spray., Mix salt and the remaining flour and sugar; toss with berries. Spoon over batter. Cook, covered, on high until berry mixture is bubbly, 1-3/4 to 2 hours. If desired, serve with frozen yogurt.

Steps:

  • Add raspberries, blueberries, strawberries, and blackberries into the bottom of the slow cooker.
  • Sprinkle cornstarch on top and mix gently.
  • Pour cake mix on top of the berries and spread out so it covers the berries.
  • Place pieces of butter on top of the cake mix and cover.
  • Cook on high for 2½ to 3 hours, until the cake is fully cooked.
  • Serve topped with ice cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together flour, 1/2 cup white sugar, and baking powder. Mix in milk and 1/4 cup butter until smooth.
  • In a medium saucepan, stir together the brown sugar, cornstarch, and water. Mix in the peaches and blueberries. Cook and stir over medium heat until thick and bubbly. Mix in 1 tablespoon butter and lemon juice. Continue cooking until the butter melts. Pour into a 1 1/2 quart ungreased baking dish. Evenly spoon batter in mounds over the hot fruit.   • Heat oven to 400°F. Grease 2-quart glass casserole with butter or cooking spray.

Steps:

  • In a crock pot combine the fruits with their juices, granulated sugar, and 1/3 cup flour.
  • Mix well.
  • Cover and cook on the high heat setting 1 to 1 1/4 hours.
  • Stir well.
  • Just before the time is up, in a food processor fitted with a metal blade, combine the remaining 1 cup flour, brown sugar, baking powder, nutmeg, and the salt.
  • Process to mix well.
  • Add the butter and process until cut into fine crumbs.
  • Add the cream and vanilla and process until the mixture holds together and forms a soft ball.
  • Drop dough by spoonfuls, evenly on top of the fruit.
  • Dust the mounds of dough lightly with the cinnamon-sugar.
  • Cover and continue cooking on high (do not cook on the low heat setting as the dough will not cook properly) about 1 1/2 hours or until the dough is cooked through.
  • Serve with whipped cream.
