BHG ROASTED CRANBERRY CHICKEN

From the 2008 November issue of BHG. This is a perfect combination for Thanksgiving flavor without cooking a turkey.

Bhg Roasted Cranberry Chicken image

Steps:

  • Pre-heat oven to 350 degrees. Coat extra large oven proof skillet with non stick cooking spray. Heat over medium-high heat. Sprinkle 1/4 teaspoons each of salt and pepper on thighs. In hot skillet cook, meaty sides down, 5 minutes, turning once, until well browned on both sides. Transfer skillet to oven. Roast, uncovered, 20 minutes, until chicken is no longer pink.
  • Meanwhile, in saucepan combine juice, berries, thyme sprigs, brown sugar, and 1/4 teaspoons salt. Bring to boiling. SImmer, uncovered, 15 to 20 minutes, until slightly thickened. Discard thyme sprigs. Serve chicken with sauce and sprinkle with thyme leaves.

When a friend of mine first served this to me I couldn't believe how something so delicious could be so easy to make. Now I never let my family use the French dressing, I'm always hoarding it for when I make this chicken.

Steps:

  • Mix the first three ingredients together in a bowl.
  • Place the chicken pieces in a baking dish.
  • Pour the sauce over the chicken to coat evenly.
  • Bake covered at 350 degrees F.
  • Uncover for the last 1/2 hour.

1 bottle French dressing
1 (1 1/4 ounce) package onion soup mix

Best Cranberry Chicken image

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the butter and onion in a 9x13 inch baking dish, and bake in the preheated oven, stirring occasionally, until the onion is translucent, about 15 minutes. Remove the dish from the oven, push the onion over to one end, and place the chicken thighs in the dish in a single layer. Return to the oven and bake for about 25 minutes.
  • Stir together the ketchup, brown sugar, vinegar, mustard powder, and cranberry sauce in a bowl. Remove the chicken from the oven, and scoop the cooked onions into the cranberry mixture. Spoon the mixture over the chicken thighs, and return to the oven.
  • Bake until the cranberry mixture is slightly caramelized and the chicken is done, about 20 more minutes. An instant-read thermometer inserted near the center should read 165 degrees F (74 degrees C).

  • Pat the chicken dry and rub the exposed garlic cloves all over the top and bottom of each thigh. Season with the salt and pepper.
  • Place a large cast iron skillet over medium-high heat and add the oil. When it's shimmering, add chicken skin-side down. Cook for 4-5 minutes, or until the skin is nicely browned. Remove the chicken and set it aside.
  • Reduce the heat to medium. Add the butter and, when it's melted, add the cranberries, balsamic vinegar, brown sugar, and the zest from the orange. Simmer for about 7-8 minutes until it starts to thicken, stirring occasionally and scraping the bottom of the skillet to get up any browned bits left from frying the chicken.

  • In a small bowl, combine the cranberries, brown sugar, and white wine vinegar. Set aside for now.
  • Pat the chicken pieces dry. Rub the chicken with the minced garlic on both sides (make sure to apply some of the garlic underneath the chicken skins). Season well with salt and pepper. Combine the rosemary and paprika then apply to the chicken pieces on both sides and again underneath the skin.
  • In a large bowl or deep enough dish, mix the olive oil, lemon juice and 2 tbsp white wine vinegar. Now add the chicken, celery, onions, and used lemon halves. Work everything together with clean hands. Set aside to marinate just for 15 minutes or so.
