BIG BAD BURGERS
LOVE THESE! I chose all my favorite ingredients to create an explosion of flavor in every bite. These are burgers I'm known for. An explosion in your mouth.

Steps:
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Melt butter in a skillet over medium-low heat. Cook and stir onion and mushrooms in melted butter until the onions are very tender and beginning to brown, 10 to 15 minutes. Sprinkle brown sugar over the mixture and continue cooking until the onions caramelize, 5 to 10 minutes more; remove from heat and set aside.
- Mix ground beef, egg, bread crumbs, horseradish, steak sauce, Worcestershire sauce, garlic, dried onion, salt, and black pepper in a bowl; shape into 4 patties about 6 inches wide and 1/2 inch thick.
- Cook burgers on preheated grill until completely browned, about 3 minutes per side. Reduce heat to medium and cook burgers another 3 minutes per side, topping each burger with a slice of pepperjack cheese for the last minute of cooking.
- Top each burger with about 1/4 of the mushroom and onion mixture, 3 pieces of bacon, and 1 tablespoon guacamole to serve.

Steps:
- Heat oil in a nonstick skillet over medium heat.
- Add the onions and garlic; saute until brown and thoroughly cooked, about 8 minutes. Transfer to a bowl.
- Add the Worcestershire sauce, bacon, egg, salt, pepper and hot pepper sauce to the onions and garlic. Mix well.
- Add the beef and combine with your hands or a wooden spoon until evenly distributed.
- Form into 4 large patties.
- Grill 5 minutes; turn over and top each patty with a slice of cheese. Cook 4 to 5 minutes until desired doneness.
- Serve on rolls with your favorite condiments.

BIG BAD BARBECUE BROWNIE BURGERS
Er, it's not really a brownie. I hope that hasn't thrown you off or anything. This is my all time favorite burger that was served at Sanfords, before they removed it from the menu and looked me strangely when I tried to describe it. Oh, well, I won't let the man get me down. It's pretty much default for me these days to use lighter ingredients, but of course feel free to do as you please.

- Prepare burgers as you usually would. I like to season mine with dried parsley, onion flakes, pepper, and season salt. 1 lb of ground beef (for me) equals four burgers.
- Grill burgers to your preference.
- Top grilled burgers with a goodly amount of cream cheese, then deli ham on top of cream cheese. Top it all with a dollop of barbecue sauce. My husband likes his with a pineapple slice, but I like it without.
- I usually whip up some oven fries, potato salad, or (if I'm feeling bogged by the week) chips as a side.

BURI DAIKON
Er.. It's a good Tuna dish More than likely came from the emperors chef, who made new dishes with food the Americans brought with them, when they invaded in 1853. Daikon is a long white Japanese radish, avalable in asian markets.

- Pour boiling water over Buri and drain.
- Peel daikon and cut into rounds.
- 2.
- Put gingeroot in 3 cups of water along with the Buri and Daikon.
- Add all seasonings.
- Simmer on low heat until daikon is softened.

- Try to get the tuna as rare as possible.
- I know it sounds alittle sick for you people with a weak stocmach, but it is a lot better texture then all the way cooked Tuna.
- This applies to salmon too.

MARGARITA PIE ALA AL ROKER

Steps:
- Position rack in center of oven; preheat to 350°.
- In a medium bowl, mix together cracker crumbs and butter. Press into a 9-inch pie plate.
- Bake until crust begins to puff, about 8 minutes.
- Remove from oven; transfer to a cooling rack. If crust has pulled away from sides, use the back of a spoon to press it back. Let cool completely.
- In a medium bowl, stir together condensed milk, zest, juice, tequila, liqueur, and salt.
- Let stand for 5 minutes to thicken.
- Pour filling into crust.
- Cover with plastic wrap, and refrigerate until firmly set, for at least 2 or up to 8 hours.
- Just before serving, whip cream until soft peaks form.
- Fold in sugar and vanilla, whipping until stiff peaks form.
- Garnish pie with whipped cream and lime slices, if using.
- Serve immediately.

- Cut the bacon and the parmesan into small cubes.
- Mix the beef, bacon, parmesan, worcester sauce and eggs together.
- Soak the whole-weat bread under the tap and squeeze out the water so it goes mushy. Add to the meat mixture. This will be a sort of glue for the patties so they stay the right shape. Also works with meatballs.
- Divide me mixture into 4 even balls.
- Shape the balls into whatever shape and thickness you like.
- Fry the patties for about 5 minutes on each side or until they have reached your preferred doneness.
- Cut the ciabatta into 4 even pieces and spread some mayo on the bottom half. Pile on the lettuce, tomato, pickles, avocado, cucumber and top off with a squirt of kethup.
- Hey presto your done. If you've done it right it'll be hard to stick it in your mouth in one go. This just adds to the pleasure of eating. Eat with hands!

- Preheat oven to 400F degrees.
- Combine meat, pepper, Tabasco sauce, garlic, chili sauce, dry onion soup mix, and 1½ ozs Guinness.
- Shape into 4 patties.
- Bake at 400F until brown, about 10 minutes.
- Baste with the remaining Guinness.
- Continue baking for an additional 10-15 minutes, until well done.
- Add your favourite burger garnishes and trimmings.
