Steps:

  • Melt butter in 12-inch skillet over med-high heat.
  • Add onion, carrot, celery, tomato paste, garlic, and thyme and cook until vegetables are softened and lightly browned, 8-10 minutes.
  • Stir in wine, scraping up any browned bits; transfer to slow cooker.
  • Stir tomatoes in slow cooker.
  • Mash bread and heavy cream into paste in large bowl using fork.
  • Mix in meatloaf mix, ½ tsp salt, and ½ tsp pepper using hands.
  • Stir meatloaf mixture into slow cooker, breaking up any large pieces.
  • Cover and cook until beef is tender, 9-11 hours on LOW or 5-7 hours on HIGH.
  • Let sauce settle for 5 minutes, then remove fat from surface using large spoon.
  • Break up any remaining large pieces of meat with spoon.
  • Season with salt and pepper to taste.
  • Makes enough sauce for 3 lb. pasta.

This is a great way to make a big batch of homemade Bolognese sauce and freeze it to have on hand for months. The slow cooking process really allows the flavors to develop and creates an incredible pairing for pasta.

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the garlic, carrots, celery and onions. Sprinkle with salt and pepper and cook about 3 minutes. Add the tomato paste, thyme and nutmeg, and continue cooking until the vegetables have softened and started to brown, about 2 minutes. Deglaze with the wine, pulling up any bits from the bottom of the pan. Season with salt and pepper.
  • Carefully transfer to the slow cooker. Stir in the cream and tomatoes. Mix the pork and sirloin together in a separate bowl, using your hands, until combined. Stir the meat into the slow cooker, spreading out evenly and avoiding any large clumps. Cover and cook on high for 4 to 6 hours or on low 8 to 10 hours. Skim the accumulated grease from the surface before serving. Serve over pasta with crusty bread for soaking up the sauce.

Steps:

  • Heat the oil in a very large saucepan. Gently cook the bacon, onions, carrots and celery for 20 mins until golden. Add the garlic, herbs, bay and mushrooms, then cook for 2 mins more.
  • Heat a large frying pan until really hot. Crumble in just enough mince to cover the pan, cook until brown, then tip in with the veg. Continue to fry the mince in batches until used up. Tip the tomatoes and purée in with the mince and veg. Rinse the cans out with the red wine, if you have some, or with a little water, then add to the pan with the vinegar and sugar. Season generously and bring to a simmer. Simmer slowly for 1 hr until thick and saucy and the mince is tender. Serve with pasta and parmesan.

  • Heat the olive oil in a large skillet over medium heat, and cook and stir the carrots, onion, and garlic until tender, about 10 minutes.   • Bring a large stockpot of water to boil. Core the fresh tomatoes and mark an "X" on the top and bottom so it's easier to peel. Add the tomatoes and allow the tomatoes to boil for 15 minutes. Drain and submerge the tomatoes in cold water to immediately stop from cooking further.
  • In a large dutch oven, heat the olive oil over medium heat. Add the onions, celery, and carrots and allow to cook for 8-10 minutes or until the onions are translucent. Drain any unnecessary grease with the exception of about 1-2 tablespoons. Add the garlic along with the tomato paste and let cook for 30 seconds.
  • Increase the flame to medium-high, add the ground beef, 1 teaspoon of salt, 1/2 teaspoon of pepper, the Italian seasoning, and the red pepper flakes. Allow the meat to brown, add the apple cider vinegar and allow the met to cook for another 3-4 minutes.
  • Add the ground meat to the crockpot along with the diced tomatoes, san marzano tomatoes, bay leaves, parmesan rinds, and parsley. Add a big pinch of salt and pepper, and allow the bolognese to cook for 8 hours on the LOW setting of your crockpot. Add the half and half and adjust salt and pepper to taste. Serve over pasta sprinkled with parmesan cheese and additional parsley.
