BIG BOY'S STRAWBERRY PIE

This recipe comes from AAARecipe.com and just in time for strawberry season. Azar's restaurant had the greatest tasting pie!

Big Boy's Strawberry Pie image

Steps:

  • In baked pie crust add sliced strawberries.
  • In small saucepan, mix water, sugar, and cornstarch and bring to boil. Boil until mixture is clear and thick, approximately 2 minutes.
  • Remove saucepan from heat and add the strawberry gelatin, stirring until dissolved. Pour this over the strawberries in pie shell. Chill and serve.

1 pie shell, 9inch, baked
4 cups strawberries, fresh and sliced
1 1/2 cups water
3/4 cup granulated sugar
2 tablespoons cornstarch
3 ounces strawberry gelatin

Found this recipe in an old Frankenmuth heritage cookbook. This pie is quick and easy to make, and does taste like the Stawberry Pies they serve at Big Boy.

Steps:

  • 1. Boil the water, sugar and cornstarch till clear.
  • 2. Add jello and lemon juice.
  • 3. Set aside to cool
  • 4. Pour over berries
  • 5. Chill and serve with whipped cream.

1 baked and cooled pie shell.
4 c sliced strawberries (placed in cool shell)
1 1/2 c cold water
3/4 c white sugar
3 Tbsp cornstarch
1 3 oz. pkg. strawberry jello
1/8 tsp lemon juice

THE OLD BOY'S STRAWBERRY PIE

This is a summertime tradition in my family, and we have NEVER tasted, (or even seen), a strawberry pie like it! You will LOVE this. 'The Old Boy' is my dad, but my mom remembers her grandmother making a pie like this when she was young.

The Old Boy's Strawberry Pie image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place a drip pan on lowest shelf to catch pie juices.
  • To Make Topping: In a medium bowl, mix until fluffy the 3/4 cup sugar, 3/4 cup flour, butter, and nutmeg.
  • Place cleaned strawberries in a deep bowl. In a separate bowl, mix together the 1/2 cup sugar, 1/2 cup flour, and cornstarch. Gently coat berries with this mixture; be careful not to crush berries.
  • Pour berries into prepared pie crust mounding them in the middle; mounding is necessary as the berries will sink as they bake. Cover berries with crumb topping and top crumbs with about 15 pea-sized blobs of butter. Wrap edges of pie crust with foil to prevent burning.
  • Bake pie in preheated oven for 20 minutes, then reduce heat to 375 degrees F (190 degrees C) and bake for an additional 40 minutes. When there are 10 minutes left of baking, sprinkle a little extra sugar over crumb topping and then finish baking.

  • Prick bottom and sides of frozen pie crust with fork, and bake according to package directions. If you're worried about the crust puffing up, before baking, place a piece of parchment paper inside the crust and add about a cup of dried beans or rice. Let cool.
  • To a small sauce pan, add water, sugar, and cornstarch and whisk to combine. Heat over MED heat until boiling, reduce heat a bit and simmer several minutes, until thickened.
  • Wash and slice strawberries, then add to cooled pie crust. Pour strawberry gelatin mixture over strawberries. Refrigerate at least 4 hours, until set.
