Momma's Cracklin Cornbread image

Steps:

  • 1. Pre-heat the oven to 400 F.
  • 2. Prepare an 8 x 10 oblong baking pan by spraying it with butter-flavored cooking spray.
  • 3. In a medium-size bowl, mix the dry ingredients, stirring to combine.
  • 4. In a second bowl, add the wet ingredients, mixing well.
  • 5. Gently fold in the dry cracklins and pour this mixture into the prepared baking dish.
  • 6. Bake at 400 F for 25 to 30 minutes.
  • 7. NOTE: Over the years this recipe has been cooked in everything from cast iron skillets or corn cob molds, cake pans and even waffle irons. I have even spooned the mixture by the ladle into a skillet of hot oil and made individual servings of fried cornbread (called corn pones). It is a very versatile and forgiving recipe.

1 1/2 c cornmeal, white or yellow
1 c all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 Tbsp sugar, optional
1 1/4 c buttermilk
1 egg slightly beaten
6 Tbsp butter, melted
1 c pork cracklins, break up the larger pieces

Fried Cornbread (AKA Hoe Cakes) image

Steps:

  • 1. Mix together flour, corn meal, and sugar into a mixing bowl. Add egg, oil and buttermilk. Mix with fork until all ingredients are moistened. Batter should be the consistency of pancake batter, so you may need to add a little more milk.
  • 2. Heat oil in heavy skillet (I use cast iron). When oil is hot, add a little less than 1/4 cup of batter to the hot oil. Fry on medium heat for about 2-3 minutes. When golden brown, turn and cook other side until golden. Remove from pan and drain on paper towels. Serve with butter, honey butter or whatever you like.

1/2 c self-rising flour
1/2 c self-rising corn meal (not mix)
1 to 2 tsp sugar
1 large egg, lightly beaten
2 Tbsp oil or melted bacon grease
3/4 to 1 c buttermilk (you may also use sweet milk)
oil for frying

Steps:

  • Gently stir together all ingredients in a mixing bowl.
  • Drop batter with a large spoon onto a hot, well greased griddle.
  • Cook as you would for pancakes, turning to brown both sides.
  • Serve with butter.

Mama's Buttermilk Corn Bread image

Steps:

  • 1. PREHEAT THE OVEN TO 425 DEGREES F. Mix the corn meal,flour, sugar, salt, baking powder, baking soda together. Then add milk, eggs and bacon fat or vegetable oil. Mix well. Turn into a well greased 9 X13X2 in pan, or 10 inch cast iron skillet.
  • 2. Bake at 425 degrees for 35 minutes. Serve hot with butter or margarine if desired.
  • 3. NOTE: This recipe works well to make corn bread dressing for Chicken and dressing, leave plain as is, or add 2 teaspoons each of sage and garlic powder to make sage Corn Bread.
  • 4. I prefer to use yellow cornmeal to white, just a personal preferance.

Grandma's Bacon Fat Cornbread image

Steps:

  • Preheat the oven to 375 degrees F. Whisk the cornmeal, sugar, baking powder, salt and baking soda together in a large bowl. Whisk the buttermilk and eggs together in a medium bowl. Fold the wet ingredients into the cornmeal mixture until just combined; set aside.
  • Heat a 10-inch cast-iron skillet over high heat. When the skillet is smoking-hot, turn off the heat and add the fat, carefully stirring it around the pan as it melts. Pour the melted fat into the cornmeal batter and stir to combine. (Do not wipe out the skillet.) Pour the cornmeal mixture into the hot skillet (batter will sizzle) and bake until the edges are golden brown and the center bounces back when pressed with a finger, 18 to 20 minutes. Serve warm or at room temperature.

2 cups stone-ground cornmeal
3 tablespoons sugar
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup buttermilk

Start checking for doneness after 35 minutes; it should be golden brown when done.

  • In a bowl, mix together the dry ingredients with a wooden spoon. Add the buttermilk slowly. Mix in the egg, cutting into the yolk with the spoon’s edge to help it mix in better. Add the water and fat or oil and stir well. The texture should be like thick soup, so you may need to add more water.
  • I like to fry the cornbread cakes in my grandmother’s castiron skillet or on a flat iron griddle, but any skillet or griddle will be fine. Heat the skillet or griddle over medium heat and grease it well with the fat of your choice (butter is delicious, but it tends to burn unless you mix it with a little oil). Once the skillet is hot and the fat is sizzling, drop the batter from a 1⁄8-cup (2-tablespoon) measure into the skillet, in batches if necessary.
  • Fry the cakes until the edges are bubbling and the centers are set, then flip with a spatula to fry them on the other side until they’re done. Like with pancakes, you can’t say how long it will take, but the second side always cooks faster than the first. If the cakes seem greasy, drain them on paper towels before serving hot.
