BEEF AND NOODLE CASSEROLE
When I was working on the local election board in the '50s, one of my co-workers gave me this beef noodle casserole recipe, and it has been a family favorite ever since. It's quick to make for unexpected company or easily doubled for a potluck.

- In a large skillet, cook beef over medium heat until no longer pink; drain. In the same skillet, melt butter over medium-high heat. Saute onion and pepper until tender. Stir in the beef, Worcestershire sauce, noodles and soups. , Transfer to a greased 3-qt. baking dish; top with cheese. Bake, uncovered, at 350° for 45-50 minutes or until heated through.

- Cook the egg noodles according to the package directions., Meanwhile, in a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink and vegetables are tender; drain. Add next 10 ingredients. Drain noodles; stir into mixture. , Transfer to a greased 13x9-in. baking dish. Sprinkle with cheese. Bake, uncovered, at 350° for 45 minutes or until heated through. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in the refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

- In a large skillet sauté ground beef with Italian seasoning. Drain, add the chopped tomatoes and set aside.
- Begin cooking the egg noodles. While egg noodles are cooking, place in a large bowl the butter, salt, pepper, cream cheese, cottage cheese, and sour cream. Set aside.
- As soon as the noodles are cooked, drain in colander, shake water out, and immediately pour into the bowl with cheese mixture. Mix to coat noodles and melt cheese.
- Grease or spray a 9x13 deep dish lasagne pan. place half of noodle mixture into pan. Place 2/3 of the beef mixture on top. Sprinkle half the cheddar on top.
- Add remaining noodle mixture. Finally, add remaining beef mixture and sprinkle with remaining cheddar. Bake in 350°F oven for 45 minutes.
CREAMY GROUND BEEF NOODLE CASSEROLE

- Heat oven to 350°F. Spray 13x9-inch baking dish or 2 1/2 to 3-quart casserole with cooking spray. Cook pasta until al dente, about 11 minutes; drain, and set aside.
- Meanwhile, in 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until no longer pink; drain. Stir in tomato sauce, garlic salt and pepper; cover and simmer 2 to 3 minutes or until slightly thickened.
- In large bowl, mix sour cream, cottage cheese, Parmesan cheese and 1/2 cup of the green onions; stir in cooked pasta.
- Spoon half of the pasta mixture into baking dish. Top with half of the beef mixture and 3/4 cup of the Cheddar cheese. Repeat with pasta mixture, beef mixture and remaining 3/4 cup Cheddar cheese. Bake uncovered 25 to 30 minutes or until mixture is thoroughly heated and cheese is melted. Top with remaining 1/4 cup green onions, and serve.

BIRD'S BEEF-NOODLE CASSEROLE

- Preheat oven to 375°. Grease a shallow 3-quart baking dish. In a 10-inch skillet over medium-high heat, sauté onion and green pepper in 2 tablespoons of the butter or margarine for 5 minutes or until tender. Add meat and brown. Drain off fat. Stir in tomato sauce, catsup and mushrooms. Cook for 5 to 10 minutes or until slightly thickened.Meanwhile, in a large mixer bowl at low speed, beat cream cheese and remaining 2 tablespoons butter or margarine until fluffy. Beat in evaporated milk, lemon juice, Worcestershire sauce, garlic powder and salt. Stir in soup. Add noodles and stir until noodles are coated. Pour into baking dish. Top with meat mixture. Bake for15 to 20 minutes or until bubbly and heated through.

BEEF BIRDS
Talk about comfort food...these are so good! My aunt calls them Beef Birds, my Mom always called them Bacon Rolls. I have seen similar recipes under the name Roulades. My brother always asked for this for his "Birthday Dinner" meal when we were kids. LOL Jazz it up with any herbs and spices you like. I usually get about 24 birds, leftovers freeze well. This recipe is very forgiving, I have even simmered 2 hours with no problems. Prep time is approximate, you may be faster than me. Serve with potatoes to soak up all that delicious gravy! - Pound steak to 1/4 inch thickness, using a meat mallet or edge of heavy plate.
- Cut meat into strips, approximately 3x5 inches. Season flour with salt, pepper and garlic powder and dredge the meat in the flour. (save the remaining flour to thicken the gravy).
- Add a 1/2 slice of bacon (size to cover the meat strip) and thin chunks of onion to the meat, leaving the end of the meat free of onion so you can roll up more easily. Roll it up, with the bacon and onion on the inside and secure with 2 toothpicks.
- In Dutch Oven or heavy pot, heat oil and brown birds well on all sides. You will have to do this in batches. Do NOT skimp on browning well, it really makes the dish.
- Return birds to the pot. Add beef broth and enough water up to 3 inches in pot. Cover and simmer on low until fork-tender, about 1 1/2 hours, check after 1 hour.
- Remove birds. Skim some, but not all of the fat from the pot. Make gravy using pan juices, flour and water, or however you like to make your gravy.

- Preheat oven to 375 degrees F (190 degrees C).
- Cook the noodles according to package directions.
- Brown the ground beef in a large skillet over medium high heat. Stir in the tomato soup, Worcestershire sauce and garlic, bring to a boil, reduce heat to low and let simmer.
- When noodles are done, stir them and the cheese into the simmering sauce until cheese is melted. Stir the sherry into the sauce and stir for 1 minute, then place in a 2 quart casserole dish and sprinkle with the Parmesan cheese to taste.
