  • To prepare the pre-fermented starter (Active time about half an hour, plus 6-8 hr resting time): If using sugar, dissolve in half a cup of lukewarm water. Sprinkle yeast over and gently mix. Add this mix and the rest of the lukewarm water to the flour, and incorporate with hands or a spatula. Continue mixing until the dough may be formed into a ball, and it is coming off the bottom of the bowl; it will still be quite sticky.
  • Cover dough with a clean kitchen towel, and place in a warm spot, away from drafts. Let rest for at least 6 hours. Punch the dough with a spatula or knife; it will deflate like a balloon. Form into a ball again. Cover with towel and set aside.
  • To prepare the dough (About 2.5 hours plus baking time): Prepare two baking sheets by covering with parchment paper; reserve. Mix half a cup of lukewarm water with one tablespoon from the flour; sprinkle yeast over water/flour mix and gently stir. In a large bowl, mix the rest of the flour with the salt, then pour yeast mixture in; add the pre-fermented starter, then incorporate everything together. Continue mixing, adding lukewarm water gradually, until a ball may be formed. Transfer ball to a working surface sprinkled with flour. Cover loosely and let it rest for about 1 to 1 1/2 hours till double is size.
  • Knead dough with both hands, pulling and folding, until it becomes elastic and does not stick to the working surface or hands, approximately ten minutes. Divide into four portions, each; roll each portion into a ball, place in a bowl and keep covered with a kitchen towel. Working with one ball at a time, use hands to press and flatten ball gradually, pinching and folding to form an elongated cylindrical shape with tapered ends.

  • Stir together bread flour, 7 tablespoons warm water, and sourdough starter in a tall jar or medium bowl until incorporated. Cover with a lid or clean kitchen towel, and let stand in a warm place until doubled in size, 3 to 4 hours. (You can use your levain immediately, or refrigerate it up to 12 hours to use at a later time or the next day.)
  • Stir together all-purpose flour, bread flour, and 1 1/2 cups water in a large bowl. Let stand at room temperature 30 minutes.
  • Place dough on a floured work surface, and divide it into 5 pieces (roughly 200 g each). Shape each piece with a tension roll: Pat down dough into a narrow square or rectangle. Use the sides of your pinky fingers to pull the top side of the dough under and then push the bottom side outward with your thumbs to create tension. Repeat this process until the dough is shaped into a tight cylinder.
  • Place a baking sheet in the oven, and preheat oven to 500°F (250°C). Remove hot baking sheet from oven and dust with semolina flour. Place dough cylinders on baking sheet3 inches apart, and bake 10 minutes. Reduce oven temperature to 475°F (240°C), and bake bread 15 minutes. Transfer baking sheet to top oven rack, and bake until dark brown, 5 to 10 minutes. (Keep a close eye on it. Remember, you want a dark bread with a thick crust so you can create a delicious soaked sandwich. Don’t be afraid to bake it longer than you are used to.) Remove bread from oven, and let cool Enjoy bread as a soaked sandwich, like the torta ahogada, or with oil, vinegar, butter, or jam.
