THE ORIGINAL BISQUICK® STRAWBERRY SHORTCAKES

The original Old Fashioned Shortcake recipe appeared on the first Bisquick® box in 1931. It's said that an advertising slogan promised - "Here's the Kind of Strawberry Shortcake Your Husband Will Rave About." Shortcakes are the sweet cousin of the dinner bisquit, and these easy-to-prepare treats have stood the test of time in my family. It started with my mom who made her Bisquick® strawberry shortcakes with her garden grown strawberries and REAL homemade whipping cream. Some thirty years later my sistes and I are still baking up these sweet treats.

Steps:

  • In medium bowl, stir together strawberries and 1/2 cup sugar; set aside for about 1 hour.
  • Heat oven to 425°F
  • In another medium bowl, stir Bisquick® mix, milk, 3 tablespoons sugar, and melted butter until a soft dough forms.
  • Drop the dough by rounded tablespoonfuls into 6 mounds onto ungreased cookie sheet; dust with sugar.
  • Bake 10 to 12 minutes or until golden brown.
  • Meanwhile, in a chilled small bowl whip the cream, adding a drop or two of vanilla and a teaspoon of sugar. Beat with an electric mixer on high speed until soft peaks form.
  • Serve one of two ways:.
  • 1. Split warm shortcakes; fill and top with strawberries and whipped cream, or
  • 2. Break up one biscuit per person into big pieces into a dessert bowl. Ladle strawberries over the biscuit; add a dolop of whipped cream.
  • COOK'S TIP: Alternatives to strawberries could include raspberries, blueberries & peaches, and my favorite, apricots & honey (Soak dried apricots in warm water for 1 hour; chop fine. Gently toss apricots with honey and let stand awhile to blend flavors. Serve over shortcakes.).

4 cups strawberries, stems removed and sliced
2/3 cup white sugar
2 1/3 cups original Bisquick baking mix
1/2 cup milk
3 tablespoons butter or 3 tablespoons margarine, melted
1/2 cup whipping cream
vanilla
1 teaspoon white sugar

Steps:

  • 1. Melt butter or margarine in microwave and set aside. (Do not use whipped margarine or butter, only sticks)
  • 2. In 2 qt mixing bowl mix Bisquick, 3 1/2 tablespoons of sugar, and cinnamon with a fork or whisk until well blended.
  • 3. Add melted butter and evaporated milk or cream to dry mixture and stir with fork or whisk just until blended. Don't overmix, mixture should be moist and sticky.
  • 4. To make shortcakes, drop by heaping tablespoons on a non stick cookie sheat. (should be about as big around as the top of a regular cupcake) Bake in 400 degree oven for 15 minutes or until golden brown.
  • 5. Sprinkle top of shortcakes with remaining tablespoon of sugar and bake until golden brown. These are best when served warm, just carefully slice in half, put bottom half in serving bowl, cover with fresh berries, peaches or fruit of your choice. Place other half on top and add more fruit and serve with whipped cream or topping.
  • 6. For cobbler, place pie filling or sweetened fruit of your choice in a 1 1/2 to 2 Quart baking dish and carefully spread Bisquick mixture on top, (I use my hands) Don't worry if it doesn't completely cover all the fruit it will spread out and cover when it bakes. Sprinkle top of cobbler with remaining tablespoon of sugar and bake in 400 degree oven for 35 to 40 minutes until golden brown. Serve warm with ice cream or whipped cream or topping of your choice. Delish!!!

2 1/3 c bisquick
4 1/2 Tbsp sugar (divided)
3 Tbsp butter or margarine, melted (stick not whipped)
2/3 c evaporated milk or whipping cream
1/3 tsp cinnamon, ground
6 to 8 fresh peaches, apples, plums, or 2 pints of fresh berries or cherries of your choice sweetened with sugar to your taste.

  • Bisquick Brownies. Using Bisquick for brownies and cakes makes total sense when you think about it. It has all the basics and can save you from having to measure everything out separately.
  • Bisquick Coffee Cake Recipe. Coffee cake is such an excellent pairing for a good cup of coffee. It’s not overly sweet, and the crunchy top makes for a beautiful texture change.
  • Bisquick Velvet Crumb Cake. This simple cake recipe is light and tender with a sweet and crunchy top. The vanilla cake comes together in a matter of minutes, all in one bowl.
  • Easy Chocolate Pudding Cake. Controversial opinion: I prefer a warm cake with some sauce over a slice of cake with frosting. The best thing about this recipe is that it’s self-saucing.
  • Impossible Chocolate Brownie Pie. Not only is this recipe easy, but it’s a lighter version of what you may have eaten before. Using applesauce to lock in moisture and heart-healthy Bisquick helps to cut down on the calories, but not the flavor.
