BLACK BEAN AND BEEF CASSEROLE
This is an adaptation to a Pilsbury recipe. It is fast, easy and tastes fantastic. Peppers can be added. This recipe is very customizable.

Steps:
- Cook onions, add beef.
- Half way through the browning process add tomatoes and beans.
- Over medium heat finish browning the meat.
- Add water and taco seasoning, reduce heat to low and simmer cover for 15 minutes.
- While meat is simmering, preheat oven to 350.
- in a 13x9in dish unroll the seamless crescent.
- Put meat mixture on top of the crescent.
- Sprinkle with cheese.
- Bake for 20 minutes or until crescent is light golden brown.

- In a small skillet, cook beef over medium heat until no longer pink; drain. In a large bowl, combine the beans, cracker crumbs, ketchup, brown sugar, onion, barbecue sauce, mustard, salt and pepper; add beef., Pour into an ungreased 1-qt. baking dish. Bake, uncovered, at 350° for 25 minutes. Top with cheese; bake 3-5 minutes longer or until cheese is melted.

Steps:
- 1. In a 10" nonstick skillet,brown meat on medium-high heat until meat is no longer pink. drain fat. stir in taco packet adding 1/4 cup water,keeping on low-medium heat.
- 2. In the same skilet, stir in Salsa,green chilies,& black beans until heated through. Preheat oven to 350 Degrees.
- 3. In a round 1.5 or 2 quart casserole dish, or 9x13 (if making a double batch), Layer torn soft tortillas ,then meat mixture, then cheese, then Repeat layering these ingredients, making cheese as the top layer. Bake 25min. Serve each individual serving with Sour cream and/or chopped green onions. Enjoy!
- 4. If making a double Batch, Double the black beans . I think using 1 lb. of meat does the job,but 1/2 a pound more would be ok too!

- Preheat oven to 350°. In a large skillet, cook ground beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in enchilada sauce and salsa; set aside. , Place 2 tortillas, overlapping as necessary, in the bottom of a greased 13x9-in. baking dish. Cover with a third of the meat mixture. Top with 1 cup corn; sprinkle with 1-1/3 cups cheese. Repeat layers once, then top with remaining tortillas, meat and cheese. , Bake, uncovered, 30 minutes or until bubbly., Freeze Option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

Food Network Kitchens nicknamed this the "broken enchilada" casserole because the soft layer of cooked tortilla chips on the bottom reminded us of enchiladas. But this dish is much easier to make!

- Preheat the oven to 375 degrees F. Lightly oil a 9-by-13-inch casserole dish.
- Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. Add the beans, salsa and 1/2 cup water and bring to a simmer; cook until the sauce thickens and coats the meat, about 5 minutes. Add salt and pepper to taste. (This beef-and-bean mixture can be made up to a day ahead of time.)
- Lay half the tortilla chips on the bottom of the oiled casserole dish. Spread half the meat mixture on top. Sprinkle half the cheese blend over the meat. Repeat with the remaining chips, meat and cheese. Bake uncovered until the cheese melts and the casserole is hot, about 20 minutes.
- Top with sour cream, lettuce, tomato, avocado and pickled jalapenos if desired. Serve with more salsa and tortilla chips on the side.

- Heat oven to 350°F. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in refried beans, salsa and taco seasoning mix. Reduce heat to medium. Heat to boiling, stirring occasionally.
