- In a medium saucepan, stir together water, sugar, blackberries, and ginger. Bring mixture to a boil, then reduce heat, cover and simmer for 20 minutes. About every 5 minutes, muddle the blackberries and ginger to release the flavors. Once the mixture is done cooking, cool for 10 minutes.
- Use a fine mesh strainer to strain the blackberries and ginger from the syrup, reserving the syrup and discarding the blackberries and ginger. This will make enough simple syrup for about 6 drinks.
- To make one drink, add the following to a glass: 2 ounces blackberry ginger simple syrup, 2 ounces limeade, 1 ounce vodka, and 3 ounces Prosecco. Top with ice and garnish with a few blackberries and mint leaves. Enjoy!
