EASY BLACKENED SWORDFISH

This white fish is coated in a tasty seasoning blend and quickly blackened at high temperature to seal in the juices.

Easy Blackened Swordfish image

Steps:

  • Heat a cast iron skillet over medium-high heat. Place melted butter in a shallow bowl. Dip fish into the butter and place on a plate. Sprinkle Creole seasoning on top of the fillets and pat it in.
  • Place fish in the hot skillet and cook until just starting to blacken, but not burn, about 2 minutes. Flip and cook until blackened on the other side, about 2 minutes more.

Mango Marinated Seared Swordfish with Tropical Fruit Salsa image

Steps:

  • For the marinade: In a small bowl, whisk together marinade ingredients. Pour into large resealable plastic bag and add swordfish. Seal and shake bag to completely coat steaks. Put in refrigerator and let marinate for at least 1 hour, turning occasionally.
  • For the salsa: Chop drained fruit into small pieces. Combine the fruit and remaining ingredients in a bowl and place in refrigerator to let flavors meld while fish is marinating.
  • In a large skillet heat canola oil over medium-high heat. Remove fish from marinade, pat dry and cook until done, about 5 minutes per side.
  • Serve topped with salsa.

1/4 cup mango nectar
3 tablespoons canola oil
2 tablespoons balsamic vinegar
1 teaspoon ground nutmeg
1 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper

1 tablespoon fresh cilantro leaves
4 scallions, finely chopped
1/2 lime, juiced
1/2 small jalapeno, seeded and minced

  • Heat large skillet on high heat. Season fish on non-skin side with salt & pepper and other spices from step 2, generously. Add oil to the hot skillet: the oil should sizzle. Add fish to the skillet non-skin side down (skin side up) and sear for 4 minutes, moving the fish around the skillet to make sure oil coats the surface of the fish and that the fish is not sticking to the pan while searing.
  • After these 4 minutes, turn the fish over to the skin side and sear for another 3 minutes on high heat. After searing on the skin side, you can actually remove salmon skin easily at this point and discard, if you don’t like to eat it.
