SINFUL CINNAMON ROLLS

I agree with Kim. This cinnamon roll recipe IS sinful! They're soft and fluffy and the balance of cinnamon and sugar is spot on. The icing drizzle on top of the cinnamon rolls is creamy with a hint of vanilla and butter. Oh, these are good!

Sinful Cinnamon Rolls image

Steps:

  • 1. Turn oven on to 200 degrees for 3 minutes and then turn off. Dissolve yeast in water in a small bowl, mix and let sit for about 10 minutes or till bubbly. Beat eggs, sugar and salt in a mixing bowl. (I used my Kitchenaid with the paddle attachment). Then add the yeast mixture. Add 1 cup of flour and beat on high for about a minute or until smooth. Add 1 stick of melted butter, mix well. Then add 3 1/2 cups of flour in 1/2 cup increments (I switch to my dough hook at this point, or you can mix in flour and knead by hand). Knead the dough 5 minutes with a mixer or 8-10 minutes by hand.
  • 2. Place the dough in a greased bowl and cover. Place a towel on oven rack and put covered bowl in warm oven on top of towel. Let dough rise until doubled, about 45 minutes to an hour.
  • 3. Remove from oven and punch down dough. On a lightly floured surface, roll dough into a rectangle until its about 3/4-in thick.
  • 4. Mix cinnamon and brown sugar together. Spread remaining 1/2 stick of melted butter over the dough and sprinkle the sugar mixture over the butter. (At this point you could add raisins, or chopped pecans if you wish). Roll dough into a log shape and cut into pinwheels according to how thick you want them.
  • 5. Put close together in a greased 9x13 pan and brush lightly with butter. Cover and let sit for 30 minutes. Bake at 375 degrees for about 20 - 25 minutes or until they start to brown. Start checking them at 20 minutes. They won't rise much while sitting in the pan, but they bake up beautifully.
  • 6. Mix glaze ingredients together and drizzle over hot rolls. You may want to double the glaze if you like a little more.

2 pkg yeast( i use the pre packaged kind that comes in a 3 pack)
1/2 c warm water (110-120 degrees)
4 eggs
1/2 c sugar
2 tsp salt
4 1/2 c all-purpose flour
3/4 c butter, melted, separated (1 1/2 sticks)
1 c brown sugar, firmly packed
2 Tbsp cinnamon
GLAZE
3-4 c powdered sugar
2 tsp vanilla extract
3 Tbsp butter, melted
enough milk to make a thick glaze (i use whole milk. your already indulging why not get a few extra calories)

  • 1. In a large mixing bowl, proof yeast in the 1/2 cup lukewarm water, with half the sugar dissolved in it.
  • 2. In a 2-cup measuring cup, heat the milk and butter together until the butter is melted.
  • 3. When the yeast is bubbly, add 1 cup flour and beat well.
  • 4. Then add eggs, salt, and another cup flour. Beat well.
  • 5. Last, add the warm milk and butter, remaining sugar, then 3 cups flour and mix by hand; gradually adding another cup of flour.
  • 6. Turn out onto silicone mat or floured surface and knead until you have worked in the flour.
  • 7. Work until the dough is only slightly sticky.
  • 8. Set in a warmed oven covered by a tea towel, to rise.
  • 9. When the dough is doubled in size, remove from oven.
  • 10. Using two 9x13" pans, form dough into dinner roll shapes and place dough into the pans (20 per pan).
  • 11. When rolls have doubled in size, bake in a 375 F preheated oven for 13- 15 min.
  • 12. When out of the oven, brush with melted butter.

1 1/2 Tbsp active dry yeast
1/2 c sugar

5 1/2 -6 c bread flour
2 Tbsp melted butter (for brushing on baked rolls)

FROM SCRATCH CINNAMON YEAST ROLLS

These rolls are from a Fleischmann's Yeast brochure printed in the 1960's. I used this recipe when I was a kid in 4-H and, after trying dozens of other recipes over the years, these have remained my all time favorite cinnamon rolls. Recipe is from scratch and takes a long time to make, but I think they are worth the effort.

From Scratch Cinnamon Yeast Rolls image

Steps:

  • 1. Make yeast dough as directed in recipe, "The Best Sweet Yeast Roll Dough I Have Ever Found". Link given below in comments. Prep time given includes time for dough to rise. Follow directions down to Step 3 where it says, At this point you can shape and fill as desired.
  • 2. Punch dough down. Divide in half. Roll one half of dough on a lightly floured surface to a 12 by 18 inch rectangle. Spread with half the butter. Combine sugar and cinnamon. Sprinkle half of the mixture over surface. Sprinkle nuts over sugar mixture if you are using nuts. Roll up tightly lengthwise, sealing edges. Cut into 12 slices. Place in greased 13 by 9 inch pan. Repeat with remaining dough. Cover. Let rise 30 to 45 minutes until nearly doubled again.
  • 3. Bake in preheated 350 degrees oven for 25 to 30 minutes. Cool for 15 minutes. Combine icing ingredients and drizzle over rolls.

Steps:

  • In large bowl mix together yeast, milk and sugar then let stand for 30 minutes.
  • Mix eggs, butter and salt into yeast mixture.
  • Mix in flour 2 cups at a time then cover with wax paper.

Steps:

  • Sprinkle yeast in water, stir to dissolve. Mix first 5 ingredients and 2 cups flour. Beat until smooth gradually add remaining flour to make a soft dough. Place in greased bowl and turn to coat. Cover and let rise for 1 1/2 hours. Combine syrup, butter and sugar. Heat until sugar is dissolved. Cool slightly. Pour syrup evenly into 2- 13"x9" pans. Steps:

  • 1. Combine butter, salt, sugar, hot water, hot potato water, and hot mashed potatoes into a bowl and stir until the butter melts.
  • 2. In a separate bowl, combine the yeast with the warm water and allow time to activate. Add yeast mixture to the potato water mixture and stir. Stir in beaten eggs. Next, add flour to the water mixture, one cup at a time, stirring after each cup, until a soft dough forms.
  • 3. Turn out onto a floured surface and start kneading until smooth, about seven minutes. Place dough into a greased bowl, turning o grease all sides. Cover, and let rise until double, about 1 hour.
  • 4. Roll dough into a long rectangle and spread softened butter over top. Combine cinnamon and sugar and sprinkle over top of dough. Roll up jelly-roll style, long way, and cut into 24 equal pieces. Place rolls into two 9x13 pans. Cover and let rise until double, about 30 minutes. Bake in a 350-degree oven until golden brown, about 25-30 minutes.
  • 5. Let rolls cool for about 10 minutes. Combine frosting ingredients and spread over rolls.
