Not only is this our best cheesecake-a rich, creamy, cherry-topped showstopper--it's also one of the easiest to make!

Steps:
- Heat oven to 350 degrees F.
- Mix graham crumbs, butter and 1/4 cup sugar; press onto bottom of 9-inch springform pan.
- Beat cream cheese and remaining sugar in large bowl with mixer until blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, beating on low speed after each addition just until blended. Pour over crust.
- Bake 1 hour to 1 hour 10 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.
- Top with pie filling before serving.

BOB'S DELICIOUS CHEESECAKE
This is my husband's first attempt at cheesecake. And we think it's a winner! It is adapted from a recipe he saw in the side of our store brand chocolate graham crackers.

Steps:
- Preheat oven to 325 degrees farenheit.
- Combine cracker crumbs, brown sugar, butter, and vanilla. Mix well and press into bottom and sides of ungreased 9 inch pie plate; set aside.
- In a large bowl, combine all remaining ingredients except cinnamon and mix well. Pour into prepared crust.
- Bake 45-50 mins or until almost firm.
- Sprinkle cooled cheesecake with cinnamon.
- Serve immediately or store tightly covered in refrigerator.

SIMPLY DELICIOUS NEW YORK-STYLE CHEESECAKE
This wonderful cheesecake recipe is from Emeril Lagasse with a few modifications to the crust. One of the secrets to a successful cheesecake that does not crack is to avoid over mixing the batter. The zest adds such a great flavor and it really is simply delicious.

Steps:
- Preheat oven to 350 degrees.
- Combine graham cracker crumbs, melted butter & 2 tbsp sugar, mixing well.
- Press onto bottom of a 10 inch springform pan, pressing up sides slightly.
- Bake in preheated oven about 8-10 minutes.
- Set aside to cool.
- In large mixing bowl using an electric mixer combine cream cheese, 1 3/4 cup sugar, zests and vanilla extract beating until light and creamy.
- Add the flour, eggs, yolks, sour cream, vanilla bean seeds and bourbon and mix just until smooth.
- Pour mixture into the prepared springform pan.
- Wrap the pan with heavy duty foil and place in a roasting pan.
- Fill the roasting pan with enough hot water to come half way up the sides of the pan.
- Bake for 1 1/2 hours.
- Remove from oven and remove from water bath.
- Remove foil and place on counter until it comes to room temperature.
- Place in refrigerator overnight or at least 6 hours.

- Slowly add Lemon juice.
