BONNIE'S PERFECT BAKED POTATOES
Anyone can bake a potato, right? Well, these baked potatoes are a little different, and a wonderful treat for those of us that love to eat the potato skin! The perfect baked potato with a fluffy white center is done in 45 minutes. Seasoned with olive oil and kosher salt. Enjoy! Photo is my own. Recipe adapted from wwitmom at food.com

- Pre-heat your oven to 400 degrees. Bake 45 minutes. If you bake more potatoes than the 3, it may take a few minutes longer for them to get done. Scrub your potatoes. Prick several holes in each potato to release the steam. Take olive oil and generously cover each potato and sprinkle kosher salt over them on both sides. Place potatoes on a baking sheet, and bake. The inside of the baked potato is white and fluffy. You can eat the skins. They are especially delicious with my Simple Romaine Lettuce and Tomato salad with garlic dressing. Spoon the salad in the potato skin and eat like a taco. It is delicious! Enjoy!
- Note: The original recipe listed the temperature of the oven as 450, but mine bakes perfectly in a 400 degree oven.

- 1. This recipe is for one baked potato. You can add more if you need to.
- 2. Here is how I bake potatoes to get skin you can eat, and a fluffy white center: Scrub the potatoes, dry with a paper towel, rub with olive oil. Prick with a fork. Place the potatoes on a baking sheet and sprinkle with kosher salt. Bake at 400 degrees for 45 minutes to one hour until they are soft with the fork test. How long it takes will depend on how big the potato is.
- 3. Make a criss cross cut in the center of the potato as shown. The wider the cut, the easier it is to add the ingredients to it. Carefully peel back the 4 corners.
- 4. Stick a dinner fork in the potato and loosen the flesh, dig around to the sides, the length and width of the potato.
- 5. Add the one tablespoon of butter, and stir and mash it around with the fork as it melts, make a little hole and add one tablespoon of evaporated milk, salt and pepper. It may seem like a lot of milk, but the potato will soak it up. Stir gently with the fork.
- 6. Now add the paprika and serve.

BONNIE'S POTATO AND ONION PIE
This is a great side dish with tons of flavor, and easy to prepare. The smell is fantastic! (No crust to make) Great served with chicken on the spit and a tossed green salad. Sliced potatoes and onions cooked in sour cream and cheese of your choice. I hope you try this side dish! Enjoy!

- 1. Cook's Tip: A word about cheese. I use jack cheese, fontina, gruyere cheese, cheddar, but I like fontina and jack cheese the best. For the milk mixture, I use a combination of sour cream, heavy cream and 2% milk, which is what I had on hand. You can use all milk, or all cream, or mix it up. Use what you like. Experiment to your hearts content. This is a fun recipe for that!
- 2. Pre-heat the oven to 375 degrees. Spray a 10 inch glass pie dish with Pam.
- 3. Scatter 2 teaspoons of garlic on bottom of Pam sprayed pie dish. Put half of the sliced potatoes on top of the garlic, overlapping the slices. Add half of the onion slices. Add salt and pepper (go easy on the pepper) Sprinkle 1/3 cup of cheese (your choice) over the onions evenly. Repeat the layer of garlic, potatoes, onions, and salt, pepper. Add the milk mixture evenly over the top, and then add the remaining 2/3 cup of cheese of choice, plus, the 1/4 cup of parmesan cheese.
- 4. Cover the pie with foil and bake 30 minutes, uncover and bake 30 minutes more. You may want to do a low broil to brown the top. Cut into wedges to serve. Enjoy!

GRANDMA'S CHEESY POTATOES
My grandmother makes this every year with a brisket for Christmas dinner. This is hands down my favorite potato recipe ever. I leave the skins on the potatoes, but this is optional. Garnish with chopped green onions or Italian parsley, and top with more cheese for a restaurant 'look.' I hope you enjoy this recipe as much as we do.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a deep 9x13-inch baking dish with cooking spray.
- Place yellow and red potatoes into a large pot and cover with salted water; bring to a boil. Cook until soft, about 10 minutes. Drain.
- Combine mozzarella cheese, Cheddar cheese, sour cream, and mayonnaise in a large bowl; mix well. Slowly add potatoes and toss; use a wooden spoon or flat spatula to avoid mashing the potatoes.
- Pour potatoes into the prepared pan. Dot butter over the top and cover with foil.
- Bake in the preheated oven, 25 to 30 minutes. Remove from oven and uncover. Preheat the oven's broiler. Return to the oven and broil until top is browned, about 5 minutes.

GRANDMA'S TWICE BAKED POTATOES
My grandma always made these anytime we were together. Everyone loves these potatoes and I like to serve them with a tossed green salad. I always bake extra so that I can have one for lunch.

- 1. Mix sour cream and chives together and set aside.
- 2. Bake potatoes in 400 oven for 1 hour, or until done. Remove from oven and cut open potatoes (do not cut potato shells completely in two) and scoop out insides into large bowl. Place 4 empty shells on baking sheet; discard the 5th shell.
- 3. Add sour cream/chive mixture, butter, onion, salt, and pepper. Mix well. Add 1 cup of the cheese; mix.
- 4. Refill 4 of the potato shells - heaping the potato mixture inside shells. Sprinkle remaining cheese over top of filling.
- 5. Place in oven for 5 to 10 minutes to reheat filling and melt cheese on top.
- 6. NOTE: You can prepare as many twice baked potatoes as you desire - just adjust the other ingredient amounts to suit your taste. Always bake an extra potato so that you have enough filling to fill the shells to heaping. You can also bake several regular sized potatoes in place of an extra baking potato. Choose large, well rounded potatoes. ENJOY!

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain.
- Return potatoes to the pot and mash until smooth. Add sour cream, cream cheese, margarine, and milk; beat until light and fluffy. Add in garlic powder, salt, and pepper. Transfer to a 9x13-inch casserole dish.
- Bake in the preheated oven until heated through, 30 to 40 minutes. Sprinkle Colby-Jack cheese over top and bake until cheese is melted, about 5 more minutes.

- 1. Preheat oven to 375 degrees. Lightly coat an 11X7 inch baking dish with Pam.
- 2. Place potatoes in a single layer in prepared dish, and top with onion.In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.
- 3. Bake in the preheated 375 degree oven for 35 to 45 minutes or until tender, depending on your oven. Stir the potatoes several times to make sure they are coated and not dry. Also if the back of the dish is getting browner, turn the dish around in the oven to assure even browning.
- 4. Garnish with chopped parsley at serving time. Enjoy!
EASY POTATO CANDY BONBONS
This recipe has been handed down by Pennsylvania Dutch farmers for years. I got it from my Mom who got it from her Mom, etc. It has few ingredients, zero fat, and has a texture akin to fresh fondant, literally melting in your mouth, not in your hand. Almost limitless potential- flavoring could be anything, and depends upon ingredients on hand, mood, season, etc. (My mother used to use mint flavoring.) Most often I bring this to church potlucks, or for Christmas and wedding occasions as it is easy to make and when people start eating it, they seem to never get quite enough.

Steps:
- Peel and boil potato.
- Drain water, mash with fork, and add milk.
- Use beaters on high speed to make as fluffy and LUMP-free as possible.
- Add almond flavoring, still beating.
- Either use beaters or a spoon and add confectioner's sugar, a little at a time. Sugar and potato have a chemical reaction that makes the potatoes look like they are melting.
- Keep adding sugar until the melting effect is almost completely gone and the mixture is forming a stiff dough.
- Knead in chocolate chips (as many as the dough will hold, or enough to suit to taste.)
- Immediately form into little balls, walnut-sized or smaller. I like to put them into mini cupcake papers (red) or whatever works best with the season, and to leave them in mini cupcake pans to dry and finish hardening.
