- 1. How to make the home made bean soup: Combine all beans in a large jar with screw top lid. Place onions and remaining ingredients in a small plastic bag and place on top of beans in jar. Seal jar and store in cool dry place. Makes enough for 6 batches of soup. To use mix: 8 cups water 1/6 Hearty Bean Soup Mix 1 cup chopped carrots 1 cup chopped celery 12 sun-dried tomatoes, chopped 1 ham bone Combine water and soup mix in large stockpot. Bring to a boil over high heat and boil for 2 minutes. Remove from heat. Cover and let stand for 1 hour. Add remaining ingredients to soup. Heat to boiling. Then cover pan, reduce heat to low, and simmer soup for 2 hours or until beans are tender. Skim fat and remove ham bone. Remove meat from bone and return to soup. Heat until hot and serve. 6 servings.

BONNIE'S OLD-FASHIONED THICK WHITE BEAN SOUP
This is how I make thick white bean soup for my family from scratch. It is easy to do, delicious, and the thick broth will have them coming back for seconds. Bake up some cornbread, and no one will leave the table hungry. Enjoy! This humble recipe is my own and so is the photo.

- 1. Cook the beans with water, covered, in a large soup pot until tender. Use any method you wish. I just rinse the beans, place them in a large heavy pot with the ham bone, bring to a boil and simmer on the lowest setting until tender. (Low heat keeps the beans from falling apart) It takes about 4 hours. Do not add any salt until the beans are tender. Salt can make the beans tough.
- 2. About two hours before the soup is ready, saute the vegetables in the olive oil until tender, adding the garlic the last two minutes. Add the tomatoes, and the sauteed vegetables to the soup. Add the thyme, black pepper, and chicken granules and the chopped ham.
- 3. Peel the 2 large russet potatoes, diced small, and place in a small sauce pan. Ladle enough liquid from the beans to just cover the potatoes. Bring to a boil and simmer on low until they are done enough to mash. Mash the potatoes by hand until almost smooth, and then dump the mixture in the soup to thicken it. Stir, continue to simmer the soup, covered on very low heat. Adjust seasoning to your taste and serve. Enjoy!

- Combine beans and peas; place 3 cups in each of four large resealable plastic bags or glass jars. Set aside. , In each of four snack-size resealable plastic bags, place three bouillon cubes, 3 tablespoons chives, 1 teaspoon savory, 1/2 teaspoon cumin, 1/2 teaspoon pepper and one bay leaf. Seal bags. Yield: 4 batches., To prepare soup: Place contents of one bag of beans in a Dutch oven; add 7 cups water. Bring to a boil; boil 2 minutes. Remove from heat; cover and let stand for 1 hour. , Drain beans and discard liquid. Add remaining water and contents of one seasoning bag. Bring to a boil. Reduce heat; cover and simmer, stirring occasionally, until beans are tender, about 1 hour., Add tomatoes, salt and, if desired, pepper sauce. Simmer, uncovered, for 20 minutes. Discard bay leaf.

- Place the beans in a slow cooker with enough water to cover, and soak 6 to 8 hours, or overnight.
- Drain the beans, and return to the slow cooker. Cover with water, and mix in the carrots, potatoes, celery, onion, and ham.
- Cover slow cooker, and cook soup on High for 3 1/2 hours. Switch to Low, and continue cooking at least 6 1/2 hours. The longer it cooks the more flavorful it becomes.

- To make bean mix: Measure pinto, navy, kidney, lima, and garbanzo beans, and combine in a large airtight container or bag.
- To make seasoning mix: Combine onion, paprika, salt, mustard powder, garlic, chicken bouillon powder, beef broth, parsley, bacon bits, and vegetable flakes in plastic bag and shake to mix. Place bag in bean container. Store at room temperature.
- To make one batch (6 bowls) soup, start 2 1/2 hours before. Rinse 1 1/2 cups bean mix in sieve under running water. Place beans in a three-quart saucepan. Add 5 cups water, 1 tablespoon oil, and 1/4 cup seasoning mix. (You can add 1 can tomatoes and juice at this time, or you can add the juice and reserve the tomatoes to add near the end of the simmering time.) Bring to a boil, reduce heat and cover. Simmer for 2 to 2 1/2 hours until beans are tender.

- 1. Preparation Instructions: In a 1 1/2 pint jar, layer the first eight ingredients in the order listed. Seal tightly. Yield 1 batch. To prepare soup, carefully remove macaroni from the top of the jar and set aside. In a large saucepan, or Dutch oven, brown beef; drain. Add the water tomatoes and soup mix. Bring to a boil. Reduce heat, cover and simmer for 45 minutes. Add the reserved macaroni, cover and simmer for 15 to 20 minutes or until the macaroni, peas, lentils, and barley are tender. Yields 4 quarts.
BONNIE'S ULTIMATE TACO SOUP WITH HOMEMADE CHIPS
We have tried a lot of Taco Soups that left us thinking that something was missing. So, we decided to try our hand at making our own. I have made this soup many times in several different ways, and each time, it was an improvement, but this final version is the one that my family likes the best. It is seasoned to perfection. You can also add other vegetables such as corn and use different varieties of beans. We prefer it just like it is written. Enjoy!

- Brown the ground chuck over medium high heat, and leave the chuck a little chunky for the soup. Drain the grease (I wipe the excess with a paper towel) When the meat starts to brown, add all the seasonings and gently mix them in with the meat. Then add the onion. Lower the heat to medium low and cook until the onions are half cooked. Add the petite tomatoes and mild Rotel in cans to the skillet (except the beans).
- Rinse the beans and set them aside to drain. We will add them later.
- Transfer the contents of the skillet to the soup pot. Add 5 cans of Better Than Bouillon, beef flavor, and gently mix it in. Cover and bring to a boil and then simmer. Test to see if onions are done, if not cook a few minutes more until tender) After you have simmered the soup for 40 minutes, then add the two cans of beans. Simmer on low heat for 15 minutes more..
- HOW TO MAKE THE TORTILLA CHIPS: I fry the chips during the last 20 minutes of cooking time for the soup. So, let's make some chips. This doesn't take but a few minutes. Heat about 1/4 inch of Crisco vegetable oil in a large skillet over medium heat.
- Cut tortilla chips from 6 yellow corn tortillas with kitchen scissors. Cut 3 at a time, first across the middle of the tortilla, then take each half and cut it into three strips.
- This will give you 6 strips about 1 inch wide. Cut the strips twice across to make a chip about 1 ½ inches long.
- Fry the chips in the hot oil until crispy and light brown, drain on paper towels, and then sprinkle with kosher salt while hot.
- I made a star from the pointed chips in the serving for hubby, and I topped it with sour cream and a jalapeno ring. These chips are easy to make and complement a variety of Mexican foods, such as Taco Soup, Chili, Snacks, and Salsa.
BLACK BEAN SOUP MIX
I made a gift basket using this soup mix. The idea and recipe are adapted from Diane Phillips's book, The Perfect Mix. I put the jar of black beans, jar of spice mixture, and a jar of California Corn Bread Mix, #72132 into a brightly colored basket along with a reggae music CD. Decorated with colorful ribbon. Looked cool and it made a great gift.

- Put the black beans into an airtight glass container.
- In a small bowl, mix together the remaining ingredients.
- Transfer to a small air tight container.
- Include the following directions with the container of beans and spices: Soak the beans in water to cover, overnight in a large soup pot.
- Drain the beans and set aside.
- In a large soup pot, heat 2 tablespoons oil.
- Add in 1 medium chopped onion and 1/2 pound sliced polish sausage; saute over medium-high heat until onion is translucent.
- Add in the beans and spice mixture; stir.
- Add in 8 cups water; bring to a boil.
- Lower heat and simmer, partially covered, for 2 hours or until beans are tender.
- Season to taste with salt and pepper.
