STOVETOP MEAT LOAVES

- In a small bowl, combine the milk, oats, onion and salt. Crumble beef over mixture and mix well. Shape into 2 loaves. , In a small nonstick skillet, brown loaves on all sides; drain. Combine the cornstarch, tomato sauce and water until smooth. Pour over meat loaves. Bring to a boil. Reduce heat to medium-low; cover and cook until meat is no longer pink, 15-20 minutes.

- Mix the breadcrumbs, milk, parsley, egg, Worcestershire sauce, onion, chili powder and garlic in a large bowl. Add the meat, season with salt and pepper and mix with your hands until combined. Shape into six 3-to-4-inch oval loaves.
- Heat the vegetable oil in a large nonstick skillet over high heat. Add the loaves and brown about 3 minutes per side.
- Whisk the ketchup, sugar and vinegar in a bowl and brush a few tablespoonfuls over the meat. Add 1/2 cup water to the skillet, cover and simmer over low heat until cooked through, about 15 minutes.
- Transfer the loaves to a plate. Add the remaining ketchup mixture to the skillet and cook over high heat, stirring, until thick, 3 to 5 minutes. Serve 4 meatloaves with the hot glaze, reserving 2 for quesadillas.

BONNIE'S STOVETOP MEAT LOAVES
I got this recipe years ago out of a magazine from a cook named Emily. Best find ever! Out of the four meat loaves I make, this is my husband's favorite. - 1. In a small mixing bowl combine the milk, oats, onion, salt, pepper and 3 tablespoons of water. Crumble the beef over the mixture and mix well to combine. Shape into 2 loaves.
- 2. In a small nonstick skillet, brown the loaves on both sides, remove from pan and drain. This is where I wipe my pan out with a paper towel to get as much grease out as possible. Put the loaves back in the pan.
- 3. Combine the cornstarch in the water in a small bowl and whisk until smooth, add the tomato sauce, whisk again. Pour sauce mixture over the meat loaves in the pan.
- 4. Bring to a boil. Reduce heat to medium-low, cover and cook for 20 minutes or when your meat thermometer says they are done or no longer pink. Baste three or four times during the cooking time. I like to use a glass lid so I can see when they need basting. They will actually glaze like they do in the oven! The tomato "gravy" is divine, pour it over the loaves when you serve it.
- 5. Calories for each loaf: 259 10 g fat 4g saturated fat 71 mg cholesterol 16 g carbohydrate 2g fiber 25 g protein Diabetic exchanges 3 lean meat, 1 starch.
- 6. Cook's note: You can use turkey in this recipe. If you do, add 1 teaspoon of chicken granules to each 1/2 pound of ground turkey. Omit the salt.
BONNIE'S BEST MEATLOAF
I never met Bonnie but I've been making her meatloaf for years! Serve with her glaze on top - or your favourite tomato or mushroom sauce. Add some garlic mashed potatoes & a green vegetable for a great weeknight family dinner. Leftovers (if there are any) make a good sandwich.

Steps:
- Heat oil in a medium skillet.
- Cook onions& garlic until tender; reserve.
- Combine eggs with milk& bread crumbs.
- Add onion mixture& remaining ingredients and mix well.
- Press into a 9" x 5" loaf pan& cover with foil.
- Bake in a preheated 375F oven for an hour.
- Combine glaze ingredients in a small bowl.
- Drain off any fat from meatloaf& brush glaze on top.
- Bake for an additional 30 minutes, uncovered.
EASY STOVE TOP MEATLOAF
This is the easiest and best tasting meatloaf I've ever had. My family loves it too! It's extremely versatile. To easily add variety, try varying the sauce used in and on the meatloaf -- use ketchup for traditional, but you can use just about anything else! I've listed this with my favorites flavor. This makes an excellent OAMC or freezer meal as well. Finally, it can even be cooked in the crock pot instead of the oven, on high, for about 3-4 hours or on low all day. Don't add any liquid.

- 1. EQUIPMENT: You will need a large, deep skillet with a tight fitting lid, and a pot for boiling the noodles. You adjust the heat by decreasing the amount of white and black pepper, or leave it out if you prefer more mild flavors. Wine is also an optional ingredient.
- 2. Cook's Tip: If you can make this ahead, it tastes really good when the flavors have a chance to blend.
- 3. SAUTE THE ONIONS: Saute the onions in the large skillet in 1 tablespoon of oil over medium low heat until done, but not brown, Remove from the pan and set aside. While you are waiting on the onions to get done, prepare the meat.
- 4. PREPARE THE MEAT: Cut the meat into one-inch pieces, removing the fat and any gristle. Add the olive oil to the skillet, turn the heat to medium high and put the meat in it and fry until brown, about 15 minutes. While you are waiting on the meat to get done, mix up the spices.
- 5. MIX THE SPICES: In a small one-cup bowl, add the cornstarch, thyme, marjoram, and pepper and mix well.
- 6. Add the spices to the browned meat, and stir gently until the meat is coated with the mixture. Stir in the broth and wine. Cover the skillet. Bring just to a boil and reduce the heat and simmer for 1 1/2 hours or until almost tender. Making sure the meat is just barely covered with the broth. Then add the cooked onions, stir, and add the fresh mushrooms, stir again. Cover once more and simmer until beef is done and sauce is thick. It sauce is not as thick as you would like it to be, add a tablespoon to a small dish with a little cold water, stir until smooth, and then add to the beef and stir. Check to see if you need to add salt.
- 7. BOIL THE NOODLES: Put on the water to boil for the noodles about 30 minutes before the meat is done. Add 1 tablespoon of olive oil, 1 tablespoon of salt, 1 tablespoon of garlic powder, and 1 tablespoon of white pepper, stir to mix and bring to a boil and cook the noodles to your liking. Drain the noodles well, and keep hot until served.
- 8. SERVE THE BEEF TIPS AND NOODLES: Ladle the noodles onto a dinner plate, and pile the beef tips in the center of the bed of hot noodles. Serve with a side dish of peas and carrots, and Enjoy!

- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

- In a large bowl, mix together 1/4 cup of the tomato soup, ground beef, bread crumbs, egg, onion, salt and pepper using your hands. Shape firmly into two loaves.
- Heat a large deep skillet over medium-high heat. Brown the meatloaves in the hot skillet, then reduce heat to medium and cover with a lid. Simmer for about 25 minutes, or until meat is cooked through.
