BOSTON MARKET MEATLOAF

This is the Boston Market Meatloaf from the Top Secret Recipe cookbook.

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Combine the tomato sauce, barbecue sauce, and sugar in a small saucepan over medium heat. Heat mixture until it begins to bubble, stirring often, then remove it from heat.
  • 3. In a large bowl, add all but 2 tablespoons of the tomato sauce to the meat. Use a large wooden spoon or your hands to work the sauce into the meat until it is very well combined.
  • 4. Combine the remaining ingredients with the ground sirloin. Use the wooden spoon or your hands to work the spices and flour into the meat.
  • 5. Load the meat into a loaf pan. Wrap foil over the pan and place it in the oven for 30 minutes. After 30 minute, take the meatloaf from the oven, remove the foil and, drain fat.
  • 6. Using a knife, slice the meatloaf all the way through into 8 slices while it is still in the pan. Pour the remaining 2 tablespoons of sauce over the top of the meatloaf. Don't spread the sauce.
  • 7. Place the meatloaf back into the oven, uncovered, for 25-30 minutes or until it is done. Remove it to cool for a few minutes before serving.

1 1/2 Tbsp kraft original barbecue sauce
1 Tbsp sugar
1 1/2 lb groud sirloin (10% fat)
6 Tbsp all purpose flour
3/4 tsp salt
1/2 tsp onion powder
1/4 tsp ground black pepper
1 dash(es) garlic powder

Steps:

  • Pre-heat oven to 400 degrees.
  • Mix first 5 ingredients.
  • Add ground beef and mix well.
  • Shape into loaf.
  • Bake for 15 minutes.
  • Pour accumulated fat off loaf, if necessary.
  • Coat top with ketchup and pour V-8 juice around edges.
  • Bake an additional 30 minutes.
  • Serve.

1 (1 1/2 ounce) envelope dry onion soup mix
1 lb lean ground beef
ketchup, for coating top of loaf
1/3 cup spicy hot V8

Steps:

  • Mix all ingredients together in first list until well blended.
  • Place in a lightly greased Bread Pan and bake at 350 for 3/4hr.
  • Remove from oven and drain excess grease from pan.
  • Mix tomato sauce and sugar together and pour over the meatloaf and place back in the oven to finish baking until done about 1/2 hr depending on the oven.

  • Preheat your oven to 375 degrees F (190 degrees C) and combine the ketchup and barbecue sauce in a small bowl. Set aside.
  • In a large bowl, combine the ground sirloin, tomato puree, toasted breadcrumbs, finely chopped yellow onion, salt, onion powder, pepper, and garlic powder. Use your hands to thoroughly combine the ingredients, but do not overwork the meat.
  • Transfer the meatloaf to a loaf pan, shape by making flat and even, then pressing your fingers down all the way along the sides (forming a well for any grease). Cover with foil and bake at 375 degrees F (190 degrees C) for 30 minutes.
  • Remove the foil (and drain off fat, if necessary), and drizzle the combined topping sauce (ketchup and barbecue mixture) down the center of the meatloaf. Do not spread. Return to the oven and bake for an additional 15-20 minutes, or until the center is no longer pink. Remove from the oven (drain fat again, if necessary) and serve immediately.
