Steps:

  • Freeze the unopened can of fruit until frozen solid, at least 18 hours. Submerge the unopened can in hot water 1 to 2 minutes.
  • Open the can, and pour any thawed syrup into the workbowl of a food processor. Remove the other end of the can, and turn the fruit out onto a cutting surface. Cut into chunks and add to the workbowl. Process, pulsing on and off until smooth. Add bourbon and process to blend thoroughly.
  • "Select from the following combinations to create other flavors of fruit sorbets. Each 15 to 17 ounce can of fruit makes 1 1/2 to 1 3/4 cups of sorbet. Liqueurs and liquors can be omitted, if you wish.".
  • 1 can (16 ounce) sliced or halved pears in heavy syrup, plus 2 tablespoons Poire William.
  • 1 can (20 ounce) crushed pineapple in heavy syrup, plus 3 tablespoons dark rum and 2 tablespoons canned cream of coconut.
  • 1 can (16 ounce) apricot halves in heavy syrup, plus 2 tablespoons amaretto.
  • 1 can (17 ounce) figs in heavy syrup, plus 2 tablespoons Marsala or sambuca.
  • 1 can (16 ounce) grapefruit sections in heavy or light syrup, plus 2 tablespoons dark rum or Triple Sec.
  • 1 can (11 ounce) Mandarin oranges in heavy or light syrup, plus 2 tablespoons Grand Marnier.
  • 1 can (15 ounce) blueberries in heavy syrup, plus 2 tablespoons creme de cassis or white creme de menthe and 1 tablespoon lemon juice.

Steps:

  • Select your peaches, its best if you have a relationship with a particular orchard.
  • I always buy my peaches at Gold's Orchard, in Stonewall, Texas.
  • Lynette Gold gives me the heads up by email when to run on over and pick up those wonderful sweet perfect peaches that the family grows.
  • Make sure that the peach is freestone.
  • Bring a large pot filled half way with water to a boil, reduce the heat and keep just at a low boil.
  • Place whole peaches in water for 2 minutes (this may vary, depending on the ripeness of the peach-the riper they are the shorter it will take) Remove from water, let cool until you can handle the fruit.
  • Remove pit by slicing peach in half length-wise, then peel.
  • Place fruit in clean hot jars (I use wide mouth jars for this).
  • Pack tightly.
  • Meanwhile, Take 4 cups sugar, 2 cups filtered water, 2 cups bourbon (I use Ira's Canadian Hunter) Cinnamon to taste, Nutmeg to taste and Allspice berries- about 10 or so- bring to a boil, stir until sugar is dissolved- let simmer while peeling peaches.
  • Should be reduced by 1/3.
  • Ladle bourbon syrup over peaches, leaving about 1 inch head space at the top of the jar.
  • Use new seals and clean rings, screwing tightly down on the top of the jar.
  • Place jars in boiling water bath for 45 minutes.
  • When you remove the jars from the water bath, the bourbon syrup should still be boiling.
  • Set jars aside, allow to cool.

1 bushel peach
2 cups Bourbon
4 cups sugar
2 cups filtered water
nutmeg
10 allspice berries
cinnamon stick (optional, for can garnish)

PEACH SORBET

You can peel or not peel the peaches. Without the peel, the texture will be smooth and pure yellow. With the peel, the sorbet will have more texture and tiny flecks of pink.

Steps:

  • In a small saucepan, combine the sugar, water, and corn syrup.
  • Place pan over medium heat and stir until the sugar dissolves.
  • Boil without stirring for 1 minute.
  • Remove form heat and cool to room temperature.
  • Place the peaches in a blender or food processor with the lemon juices, salt, and cool sugar syrup.
  • Process until the mixture is smooth.
  • If the puree is too thick to blend properly, add water, 1 tablespoon at a time until mixture blends easily.
  • Freeze immediately in an ice cream maker according to the manufacturer's directions.
  • When finished, the sorbet will be soft but ready to serve.
  • For firmer sorbet, transfer to a freezer safe container and freeze several hours.
