BOW TIE PASTA SALAD WITH LENTIL AND APPLE

The first time I tried this was at a Pot Luck luncheon at my office. What a hit - delicious and fresh. Best served at room temperature.

Bow Tie Pasta Salad With Lentil and Apple image

Steps:

  • Place lentils and water in sauce pan and simmer over medium heat for 40-45 minutes, until tender. Drain and chill.
  • Meanwhile, cook pasta until al dente - drain and rinse under cold water.
  • In a large bowl, combine lentils, pasta and remaining ingredients.
  • Chill for 1 hour to let flavors blend. Take out and let stand at room temperature before serving.
  • Enjoy!

1/2 cup dried lentils
3 cups water
8 ounces bow tie pasta, farfalle
10 cherry tomatoes, halved
4 scallions, chopped
2 apples, cored and diced
1 yellow pepper, seeded and diced
1/2 cup olive oil
1/4 cup balsamic vinegar, I prefer white balsamic
1/4 cup fresh basil leaf, chopped
2 garlic cloves, minced
2 tablespoons fresh parsley, minced
1/2 teaspoon salt
1/4 teaspoon dried red pepper flakes
1/4 cup parmesan cheese, grated

My aunt and mom created this recipe. It is a family favorite and a great item to bring to picnics and potlucks.

Bow-Tie Pasta Salad image

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the bow-tie pasta at a boil until tender yet firm to the bite, about 12 minutes; drain.
  • Quickly rinse the cooked pasta in cold water to stop it from continuing to cook; drain.
  • Mix the cooled pasta, broccoli, tomatoes, sliced green onions, celery, red bell pepper, and green bell pepper in a large bowl.
  • Gently stir the salad dressing, Parmesan cheese, sugar, basil, and salt in a bowl until evenly mixed.
  • Pour the salad dressing mixture over the pasta mixture; gently toss to coat evenly.
  • Refrigerate 3 hours to overnight before serving.

  • Cook pasta according to package directions. Drain and rinse under cold water. In a large bowl, combine romaine, chicken, tomato, bacon and pasta. , In a small bowl, whisk mayonnaise, water, barbecue sauce, vinegar and pepper. Pour over salad; toss to coat. Serve immediately.
