Quick Chicken And Wine image

Steps:

  • Season chicken with salt and pepper to taste. In a shallow plate, spread Parmesan cheese. Divide chicken into three parts and dip seasoned chicken in eggs, then coat well with Parmesan cheese. Repeat until all of the chicken pieces are well coated (if you run short on egg and Parmesan, add one more egg and more Parmesan as needed).
  • In a skillet, melt butter or margarine over medium high heat. Cook chicken, stirring frequently, until golden brown.
  • Reduce heat and add wine. Cover and simmer over low heat for 20 minutes

Chicken Thighs Braised in White Wine image

Steps:

  • In a 12-inch skillet with a tight-fitting lid, arrange thighs, bone side up; season with salt and pepper. Add garlic, wine, and thyme. Bring to a boil; reduce to a simmer. Cover and cook, 30 minutes.
  • Turn chicken over. Place a lemon slice on each piece; cover and continue simmering until tender, about 15 minutes. Leaving garlic and liquid in skillet, transfer chicken and lemon slices to a platter. Cover tightly with foil to keep warm.
  • Bring liquid in skillet to a boil; cook until reduced to 1/2 cup, about 5 minutes. Remove skillet from heat. Add butter, parsley, and lemon juice; stir until butter has softened and sauce is smooth. Season with salt and pepper. Serve chicken with sauce and, if desired, rice.

Knott's Berry Farm Boysenberry Pie image

Steps:

  • In a saucepan, combine water, sugar, salt, corn syrup and lemon juice. Bring to a boil.
  • Combine cornstarch and water. Blend thoroughly.Add frozen boysenberries.
  • Pour both mixtures into unbaked 9 inch pie crust. Cover with second top crust and seal well around the edges. Make several slashes in the top to release steam.
  • Bake in a preheated 400 degree F oven for 40 minutes until top is golden brown. Cool on a rack.

Steps:

  • Toss the chicken in the flour, then tap off the excess. Mix 1 tsp of the excess flour with a little stock and set aside. Heat the oil in a frying pan, then add the chicken, mushrooms and thyme. Cook over a medium-high heat for about 5 mins, turning the chicken breasts over once until golden.
  • Lift the chicken out, then set aside. Pour in the wine and the remaining stock and boil for 5 mins or until reduced by half. Add the flour and stock mix, stirring until the sauce thickens a little. Put the chicken back into the pan, along with any juices from the plate, then simmer for 5 mins or until cooked through and the sauce is glossy. Serve with mash.

  • Heat oil in a large skillet over medium high heat. Cook garlic in oil until tender. Place chicken in the skillet, and cook about 10 minutes on each side, until no longer pink and juices run clear.

Maureen's Chicken With Wine image

  • You can marinate this if you like but it is not necessary.
  • Put the ingredients in a roasting pan and mix. Then drop the chicken in the pan.
  • Bake 1 ½ hours at 375 degrees. Baste the chicken at least once to get a great color on the skin. If you cook it for 2 hours the meat will fall off the bone.
  • If you use boneless skinless chicken breasts only cook 45 - 50 minutes.
  • I serve with green beans and rice.

CHICKEN WITH MUSHROOMS AND WINE

The boneless, skinless chicken breast is as simple to prepare as a burger, nearly as ubiquitous and generally seen as both classier and "healthier." But in the kitchen, it has two major shortcomings. First, its intrinsic flavor is minimal, more akin to pasta than to even an egg. (An egg is exciting by comparison.) Second, preparing a burger isn't that simple: unless you're looking for well done, you have to get the timing just right. In preparing chicken breasts, the cooking time should be just long enough for all but the last traces of pink to vanish - and no longer. Chicken With Mushrooms and Wine image

Steps:

  • Season chicken breasts with salt and pepper. Put a large skillet over medium-high heat for 2 or 3 minutes.
  • Add extra-virgin olive oil and 2 tablespoons butter to the skillet and swirl it around.
  • Put flour on a plate. When the butter foam subsides, dredge the chicken in flour, shaking to remove the excess.
  • Add the breasts to the skillet and cook so there is a constant sizzle but no burning.
  • Cook, turning once, until the chicken is browned on both sides and nearly cooked through, about 5 minutes per side.
  • Transfer the chicken to a plate and cover loosely with foil to keep warm.
  • Add mushrooms to the skillet and cook, undisturbed, until the liquid from the mushrooms evaporates completely.
  • With the heat still on medium-high, add wine to the skillet and let it bubble, stirring, until it is reduced by half, about 2 minutes.
  • Add the remaining tablespoon of butter and cook until the sauce is thickened; return the chicken breasts to the skillet, turn them in the sauce. Season to taste with salt and pepper and serve.
  • Garnish with chopped parsley.

Steps:

  • 1. MELT 2 tablespoons butter in a large skillet over medium heat.
  • 2. Cook and stir 8 chicken breasts in butter until browned and thoroughly cooked, about 30 minutes
  • 3. Remove from skillet, season chicken with the salt, pepper and nutmeg and cover to keep warm.
  • 4. COOK and stir ham in pan with juices from chicken, then set aside with the chicken.
  • 5. Add remaining butter to the same skillet.
  • 6. Add mushrooms, stir and cook 2 minutes.
  • 7. Add mushrooms to pan with chicken and ham.
  • 8. ADD onion to same pan and cook until tender.
  • 9. Blend in 3 cups of the chicken broth. Cook and stir 5 minutes
  • 10. BLEND cornstarch into remaining chicken broth in a cup or small bowl.
  • 11. Add to sauce; cook and stir until thickened and smooth
  • 12. Remove from heat and stir in lemon juice, lemon peel and preserves.
  • 13. ARRANGE chicken, mushrooms and ham on a bed of rice. Top with sauce.
  • 14. Serve

Baked Chicken With Wine image

Steps:

  • Coat chicken with seasoned flour.
  • Melt 4 tablespoons butter in shallow baking dish.
  • Put chicken in pan, skin side down; bake, uncovered at 350°F for 45 minutes (or until almost tender).
  • Meanwhile, melt 2 tablespoons butter in saucepan and sauté mushrooms.
  • When cooked and the liquid is mostly reabsorbed, add 2 more tablespoons of butter.
  • Stir in flour.
  • Add bouillon and wine, cook, stirring constantly, until thick and smooth.
  • Remove chicken from oven.
