MENMA - BRAISED BAMBOO RAMEN TOPPING

I normally make this using whole refrigerated bamboo shoot that I can purchase in Japanese market nearby in California. If whole bamboo shoot is used, cut lengthwise into about 1/4 in slices first. Then cut into 1/4 inch slices. Finally cut the 1/4 inch slices into half. The slices do not need to be perfect - they will taste great when finished. You can also use canned bamboo as well (although taste will be not as good as the fresh version). Menma is granddaddy of one of ramen toppings. In old days if you ordered ramen in Tokyo this was always one of the toppings along with shoyu or soy sauce flavored soup. You can purchase this in a bottle commercially but the cost is quite high for a small bottle. I like to sometimes serve this as a snack for beer, white wine or sake. If served as snack, it is very good with sprinkling of roasted sesame seeds on top.

Steps:

  • In a frying pan add sesame oil and stir fry bamboo slices for 1 - 2 minutes over medium heat.
  • Reduce heat to low and add all other ingredients and stir fry for additional 15 minutes or until most of the liquid is gone.
  • Place in a container and keep refrigerated or can be frozen. Used as topping for ramen or can be served as appetizer with white wine, beer, or sake.

  • Turn on the instant pot, press the sauté button. Pour 1 tablespoon of sesame oil into the instant pot. Then, put the cut bamboo shoots.
  • After that, add 2 tablespoons of dark soy sauce, ½ teaspoon of garlic powder, 2 tablespoons of soy sauce, 2 tablespoons of brown sugar and ½ cup of water. Mix it well and make sure the bamboo shoots are covered with sauce.
  • Close the lid and vent, push the manual button, adjust time to 5 minutes at high pressure and naturally release the pressure. When it is done, mix the bamboo shoots with sauce again. It's great to go with homemade chili oil if you like spicy food!

  • Before we begin, a note: if you’re using fresh winter bamboo shoots, it’s a good idea to blanch the bamboo first...once they are cut. You will also need to increase the simmering time when using winter bamboo.
  • Heat 3 tablespoons of oil in a wok over medium heat. Add the ginger and cook for about 30 seconds. Turn down the heat, and add the rock sugar, allowing it to dissolve completely in the oil. Now add the bamboo and turn up the heat; stir and mix everything well. Cook for a few minutes––until the edges of the bamboo start to brown slightly.
  • Now add the Shaoxing wine, light soy sauce, dark soy sauce, and water. Stir to combine. Cover and simmer for about 10 minutes over medium heat. After 10 minutes, uncover the pan, turn up the heat to reduce the liquid, and add a couple of drops of oil before plating. It sounds hokey, but this will give the dish an attractive sheen!

  • Remove outer leaves from bamboo and cut the top off on an angle and cut the bottom off with a sharp knife and peel bamboo so all you have is the pale yellow bamboo underneath. Careful as they are very tough, use a sharp chefs knife. Cut the bamboo in half lengthwise. (If you are using canned bamboo skip to step 4)
  • Place the prepared bamboo into a medium pot and cover with enough water to boil. Do not salt the water as this may toughen the bamboo. Cover with a lid and gently boil for about 20 minutes or until you can put a knife into the bamboo. Rinse bamboo with fresh water and drain.
  • In a wok place in your canola oil and add the anise and Sichuan peppercorns until aromatic. Add the cut bamboo and just stir fry until the edges get a slightly browned. Add the gluten free vegetable broth, tamari (soy) sauce, brown sugar and shaoxing wine. Place a lid on top of your wok. The lid does not have to cover the whole wok it just needs to be able to cover the bamboo and the liquid. Braise the fresh bamboo in liquid for about 20 minutes or until you can easily cut it with a knife but is is still delightfully crunchy. Stir occasionally to prevent sticking.
