BRAISED CHICKEN WITH SHIITAKE MUSHROOMS

Braised Chicken with Shiitake Mushrooms image

Steps:

  • 1. Mix the sugar, oil, 5 spice, rice wine, oyster sauce, soy sauce, dark soy sauce, and cornstarch. Pour over chicken and let marinate at least 2 hours to overnight.
  • 2. Add some oil to the skillet. Add the ginger and garlic and saute for 1 minute. Add the chicken and brown on both sides.Remove the chicken to a plate. Add the mushrooms and cook until browned.
  • 3. Add the chicken back to the skillet with any juices accumulated. Add water just enough to cover the chicken. Bring to a boil and reduce to a simmer and simmer about 15 to 20 minutes until chicken is done and sauce thickened.
  • 4. Garnish with scallions and cilantro

4 chicken thighs
8 oz shiitake mushrooms
2 Tbsp sugar
1 tsp sesame oil
4 clove garlic minced
1 tsp chinese 5 spice
1 Tbsp rice wine
2 Tbsp each soy sauce and oyster sauce
1 tsp dark soy sauce
1 1/2 tsp cornstarch
1 Tbsp grated ginger
3 scallions chopped
fresh cilantro chopped

Braised Chicken with Shiitake Mushrooms and Ginger image

Steps:

  • Season chicken with salt and pepper.
  • Heat oil in Dutch oven.
  • Add chicken skin side down. Fry on medium until skin is well browned (about 10 min.)
  • Flip and cook chicken on other side (about 3 min.)
  • Transfer chicken to plate. Discard skin. Save 3 tablespoons of fat in the dutch oven.
  • Cook onion and mushroom, stirring occasionally (about 6 to 8 min.)
  • Stir in broth and 1 cup water. Scrape up brown bits.
  • Add oyster sauce, soy sauce, and ginger. Bring to a simmer.
  • Return chicken and any juices to the pot. Simmer about 40 minutes.
  • Remove chicken.
  • Thicken sauce with some corn starch. Pour over chicken.

2 pounds Chicken Thighs (bone in, skin on, trimmed, patted dry)
1 pinches Kosher Salt, Black Pepper
12 ounces Shiitake Mushroom (fresh, stemmed, halved)
1 piece Yellow Onion (thinly sliced)
1 cup Low Sodium Chicken Broth
6 teaspoons Oyster Sauce
3 tablespoons Fresh Ginger (peeled, thinly sliced)
1/4 cup Low Sodium Soy Sauce
1 pinch Green Onion

Spicy Braised Chicken with Mushrooms and Star Anise image

Steps:

  • Heat peanut oil in heavy large pot over medium-high heat. Add chicken; sauté until brown, about 4 minutes per side. Transfer to bowl. Add mushrooms, 1 1/2 cups green onions, garlic and ginger to pot. Sauté until mushrooms are tender, about 5 minutes. Return chicken to pot. Add chicken broth, hoisin sauce and star anise. Bring to boil. Reduce heat, cover and simmer until chicken is cooked through, about 20 minutes.
  • Remove chicken from pot; cool slightly. Remove skin and bones from chicken and discard. Cut meat crosswise into 1/2-inch-wide strips.
  • Meanwhile, boil mixture in pot until reduced to 2 1/2 cups, about 20 minutes. Stir in cabbage and chili sauce. Boil until cabbage is tender, about 4 minutes. Return chicken to pot; simmer until heated through, about 2 minutes. Transfer to bowl. Discard star anise. Sprinkle with remaining 1/2 cup green onions.

2 cups chopped green onions

1 tablespoon minced peeled fresh ginger
2 14 1/2-ounce cans low-salt chicken broth
1/2 cup hoisin sauce
4 whole star anise
4 cups 3/4-inch-wide strips Napa cabbage (about 1/2 small head)
1 tablespoon hot chili sauce (such as sambal olek or sriracha)*

  • Place dried shiitake mushrooms in a medium-sized bowl and add water to cover. Rehydrate mushrooms until soft, 20 to 30 minutes (or according to instructions). Set aside.
  • Wash chicken carefully with tap water. Transfer to a large pot and add water to cover chicken. Cover pot and bring to a boil. Continue to cook over medium heat, uncovered, for 10 minutes. Use a large ladle to skim the foam from the surface. Try to leave the oil on top, however, because it will add a nice flavor to the dish later.
  • Transfer the chicken to a wok (or dutch oven). Pour in chicken broth until it almost completely covers the chicken. Add Shaoxing wine, ginger, and star anise. After bringing to a boil, simmer covered over low heat for 20 minutes.
  • While braising the chicken, prepare the mushrooms and other ingredients. Wash the shiitake mushrooms carefully with running water.
