ROASTED BRANZINO WITH LEMONS

Roasted Branzino with Lemons image

Steps:

  • Put an oven rack in the lower 1/3 of the oven. Preheat the oven to 400 degrees F.
  • In a small skillet, heat the oil over medium-high heat. Add the pancetta and cook, stirring occasionally, until brown and crispy, about 8 to 10 minutes. Drain on paper towels. Set aside.
  • Lay a piece of heavy-duty foil on a baking sheet. Spray the foil with vegetable oil cooking spray. Lay the fish fillets, skin side down on the foil in a single layer and season with salt and pepper, to taste. In a small bowl, mix together the lemon zest, fennel fronds and thyme. Spoon the mixture over the fish. Arrange the lemon and fennel slices on top of the fish and sprinkle with the cooked pancetta. Pour the wine on top. Lay another piece of foil on top and crimp the edges of both pieces to form a packet. Roast until the flesh is flaky and cooked through, about 25 to 30 minutes. Remove the baking sheet from the oven and let sit for 5 minutes. Carefully remove the top piece of foil. Put the cooked lemon slices and fennel on a platter. Carefully transfer the fish to the platter on top of the fennel and lemon slices. Garnish with parsley and serve.

Roasted Tomatoes and Mushrooms image

Steps:

  • Preheat oven to 375 degrees with racks in upper and lower thirds. Place tomatoes on one rimmed baking sheet, and mushrooms on another. Toss mushrooms with 1/4 cup oil and 1 tablespoon thyme. Toss tomatoes with remaining oil and thyme. Season both with salt and pepper. Spread each in a single layer, turning tomatoes cut-sides up.
  • Roast tomatoes on upper rack 15 minutes. Add mushrooms to lower rack and continue roasting until vegetables are soft and golden brown in places, 35 to 45 minutes more. Serve warm or room temperature.

Steps:

  • Preheat the oven to 500 degrees F. Set a wire rack in a rimmed baking sheet.
  • Cut slits into the branzino skin 1 inch apart, being careful not to cut through the spine. Stuff each slit with the garlic then drizzle the fish with oil. Season heavily with salt and pepper. Stuff the fish cavity with the lemon slices and the thyme sprigs. Transfer the fish to the wire rack and roast in the oven until the flesh is flaky and cooked through, about 14 minutes.
  • Remove and discard the thyme sprigs. Sprinkle with the parsley and serve.

Steps:

  • Warm a large pot of olive oil to 200 degrees F. Season fish with salt and pepper. Submerge in oil. Add tomatoes and submerge. Cook slowly until fish is done, about 15 minutes. Remove fish.
  • In a saute pan over medium-high heat, cook the lardons until crispy. Remove and pour out most oil. Add garlic and cook until slightly brown. Add spinach and cook until wilted. Remove and keep warm. Add fish and turn, to quickly crisp skin on all sides. Serve fish with tomatoes atop spinach and sprinkle with lardons.

Olive Oil Poached Cod with Tomato Sauce, Pine Nuts and Herbs image

Steps:

  • For the sauce: Add 1/4 cup olive oil and the garlic to a large Dutch oven over medium heat and cook until the garlic is aromatic, about 2 minutes. (Make sure not to overcook the garlic, as there should be no color.) Add the red pepper flakes, then the crushed tomatoes and the remaining 1/4 cup olive oil and bring to a simmer. Add the olives and capers and cook, stirring occasionally, until the sauce thickens and the water reduces from the top, about 12 minutes. Season with salt and pepper, then add the rosemary sprigs and allow to steep.
  • For the caramelized shallots: Meanwhile, heat the butter and oil in a 12-inch saute pan over medium-low heat. Add the shallots, sugar and salt and cook, stirring occasionally, until the shallots are caramelized, 8 to 10 minutes. Set aside.
  • For the cod: Heat the oil, garlic and basil in a 14-inch saute pan to 120 degrees F and cook until the garlic is golden brown and the basil has started to wilt. Discard the garlic and basil (they have done their job and seasoned the oil).
  • Season both sides of the cod with salt. Gently place the cod fillets in the pan, making sure they are submerged, and poach until the fillets turn cloudy white and are firm to the touch with a slight bounce, about 8 to 9 minutes. Remove from the oil with a slotted spatula and drain on a paper towel-lined plate.
  • For serving: Lightly toast the pine nuts in a small saucepan over medium-low heat, stirring occasionally, until golden brown, about 5 minutes. Toss together with the basil, parsley, oil and a pinch of salt in a small bowl.
  • Spoon the sauce onto a large platter and nestle the fish on top. Top each filet with a spoonful of caramelized shallots, then sprinkle the pine nut mixture over the fish.

  • Place a large skillet wide enough to fit both fish side by side over medium heat. Pour in ¼ cup olive oil, then carefully lay both fish in the oil. Cook, undisturbed, until the skin is browned and crisp, about 3 minutes. Using a long, thin spatula, carefully flip each fish to the other side and cook until browned and crisp on the opposite side, 3 minutes more. Using the spatula, transfer the fish to a rimmed baking sheet.
  • Pour the remaining ¾ cup olive oil in the skillet. Add the onion and garlic and cook, stirring occasionally, until translucent, 3 to 5 minutes. Add the bell pepper and chile flakes and cook, stirring, until the peppers soften slightly, about 3 minutes more. Pour in the wine, bring to a simmer and cook, stirring, until the mixture has reduced by one-third, about 5 minutes. Stir in the tomatoes, olives and capers, reduce the heat to low and season with salt and pepper. Simmer the sauce, stirring often, until the tomatoes have softened, about 5 minutes.
  • Turn off the heat, then carefully return the fish to the skillet, spooning some of the sauce over each fish. Cover with a lid or a sheet of foil and bake for 8 minutes. Uncover and continue to bake until the fish is fully cooked through and the sauce is reduced and thick, 5 minutes more. Carefully remove the skillet from the oven, drizzle with more olive oil and garnish with parsley before serving.
