Caramel Pecan Cinnamon Rolls (Bread Machine Recipe) image

Steps:

  • Rolls:
  • Place ingredients in machine following the specifications of that particular machine. Set for dough cycle. If bread machine seems to be working too hard to mix dough, sometimes I add 1 - 2 Tbls vegetable oil to get it moving better.
  • After complete on dough cycle, remove from machine and roll out to about 17x10" rectangle. The larger you roll the rectangle, the more layers you have, which is really nice.
  • Caramel Pecan Topping:.
  • Mix butter, brown sugar and water together in a small saucepan, heat on low until butter is melted.
  • Increase heat to medium and boil, stirring constantly, for 3 minutes.
  • Stir in vanilla and remove from heat.
  • Pour into cake pan, then place pecan halves over the caramel.
  • Filling:
  • Mix together brown sugar, pecans and cinnamon.
  • Moisten the dough by brushing with milk.
  • Sprinkle brown sugar, pecan and cinnamon mixture over top.
  • Roll tightly from long end, pinching edges closed when completely rolled (sometimes putting a little milk on the edge helps seal it).
  • Slice rolled dough into 1/2" slices (or larger if a larger bun is preferred).
  • Place into pan on top of caramel.
  • Let rise until doubled (about an hour, or quicker if you put the pan on a heating pad).
  • Bake at 350° for 20 minutes, until golden. Do not overbake.
  • Invert onto a cookie sheet immediately, before caramel hardens.

Steps:

  • Put yeast in bread machine first on bottom, then flour, sugar and salt.
  • Then melt butter in microwave. Add beaten egg, milk and water.
  • Pour onto dry ingredients in bread machine on the dough setting.
  • When dough is done, put it onto a lightly floured surface.
  • Knead in enough flour to make it easy to handle.
  • If it is too elastic, cover and leave 10 minutes.
  • Use floured rolling pin to roll out dough on floured surface.
  • Roll out into rectangular shape to approx 1/4-inch thick.
  • Use filling and spread over entire surface of dough with spoon.
  • Roll up dough.
  • Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.
  • Cover with a tea towel and leave in a warm place for approx 30 minutes, until double in size.
  • Bake in a 350° oven for about 25 minutes, light brown on top.
  • When done, make glaze and swirl over buns.

Steps:

  • Measure first 8 ingredients into bread machine (refer to your bread machine instructions for the proper order- my machine would require the order listed here).
  • Select the dough cycle.
  • Meanwhile, prepare syrup.
  • Boil together butter, water and brown sugar for 1 minute.
  • Immediately, pour into a 9 X 13 pan; tilt pan to cover bottom evenly.
  • Arrange pecans, flat side up on syrup.
  • When cycle is complete, remove dough from machine to a lightly floured surface.
  • If necessary, knead in enough flour to make dough easy to handle.
  • Roll dough into a 12 X 18 inch rectangle.
  • Brush with melted butter.

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.

  • 1. Place all Dough ingredients in bread pan in the order listed. Select SWEET DOUGH cycle.
  • 2. Grease 13x9x2 inch rectangular pan. Mix 1/3 cup margarine, the brown sugar, corn syrup and pecan halves. Spread mixture in pan.
  • 3. Mix 1/2 cup granulated sugar and the cinnamon. Flatten dough with hands or rolling pin into 15x10 inch rectangle. Spread with 2 tablespoons margarine: sprinkle with sugar-cinnamon mixture. Roll up tightly, beginning at 15 inch side. Pinch edge of dough into roll to seal. Cut roll into 1 inch slices. Place in pan. Cover: let rise in warm place about 1 hour or until double.

Cinnamon pecan sticky buns image

Steps:

  • Place the flour, sugar and 1 tsp salt in a mixing bowl, then rub in the pieces of butter until the mix has the texture of breadcrumbs. Tip in the yeast and eggs. Pour in the milk and mix well until you get a soft dough (you may need to add a little more milk). Knead in a mixer with a dough hook for 7 mins or by hand for about 15 mins until the dough is smooth, soft and springy. Tip into a lightly oiled bowl, cover with oiled cling film or a clean tea towel, then leave to rise in a warm place for about 1 hr or until doubled in size.
  • Make the filling: place the cinnamon, sugar and pecans in a food processor, then whizz until the nuts are finely ground. Punch down the dough and knead to knock out the air, then split the dough in two. Roll and stretch each piece to form a 25 x 35cm rectangle.
  • Melt the butter for the topping. Brush half all over each rectangle, then sprinkle half the filling mixture over each. Use a rolling pin to press the filling into the dough. Tightly roll each rectangle up from one of the long ends to get a thick log, then pinch the ends together to seal. Cut each log into 8 pieces. Can be frozen for up to 1 month.
  • Brush two 20 x 30cm deep baking trays with melted butter. Mix the maple syrup and sugar into the remaining butter, then pour this over the bottom of each baking tray, swirling around so it is coated. Sprinkle with the pecans. Place the rolls on the tray, leaving a gap of at least 2cm around each roll. Cover with lightly oiled cling film, then keep in a warm place for about 30 mins until lightly risen.
  • Heat oven to 180C/fan 160C/gas 4. Remove the cling film from the tray, then bake for 30 mins until the buns are lightly browned and feel firm. Serve warm, sticky-side-up.

  • In a small bowl, dissolve 1 teaspoon sugar and yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1/4 cup sugar, 1/4 cup butter and salt; stir until melted. Let cool until lukewarm.
  • In a large bowl, combine the yeast mixture, milk mixture, eggs and 1 1/2 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. Steps:

  • Dissolve yeast in warm water in a large mixing bowl. Add buttermilk, eggs, 2 1/2 cups flour, 1/2 cup of the butter or margarine, 1/2 cup of the sugar, baking powder and salt. Blend 30 seconds with mixer on low speed, scraping sides and bottom of bowl. Beat 2 minutes on medium speed. Stir in remaining 3 cups flour. (Dough should remain soft and slightly sticky) Knead for 5 minutes, or about 200 turns on a lightly floured board. Cover dough and allow to rest for half an hour.
  • Divide dough in half and roll each half into a 12x7 inch rectangle. Spread each half with 1 tablespoon soft butter and sprinkle with 1/4 cup of the sugar and 1 teaspoon of the ground cinnamon. Roll up the halves, beginning at the wide side. Seal well by pinching the seams. Cut each roll into 12 slices.

Vegan Bread Machine Cinnamon Rolls image

Steps:

  • Prepare dough: Place almond milk, melted vegan margarine, 1/2 cup sugar, salt, vanilla, and flour into a bread machine in the order listed. Start the Dough setting.
  • Mix warm water, 1 tablespoon sugar, and yeast in a glass measuring cup.
  • Preheat the oven to 300 degrees F (150 degrees C) for 1 minute. Turn the oven off and immediately place the yeast mixture inside to proof for 15 minutes.
  • Add proofed yeast mixture to the bread machine and let the cycle finish, about 1 hour 45 more minutes.
  • Remove dough and roll into an 12x18-inch rectangle. Mix brown sugar, walnuts, and cinnamon for filling in a bowl; spread evenly over the dough. Starting at the long end of the rectangle, roll dough into a log; slice log into 1-inch wide pieces. Transfer to a greased baking pan with cut-sides up.
  • Preheat the oven to 400 degrees F (200 degrees C) for 1 minute. Turn the oven off; immediately place the rolls inside along with an uncovered bowl of boiling water. Allow rolls to proof for 1 hour.
  • Remove rolls from the oven. Preheat to 350 degrees F (175 degrees C).
  • Bake rolls in the preheated oven for 15 minutes.
  • Meanwhile, mix powdered sugar, almond milk, and melted vegan margarine for glaze in a bowl.
  • Remove rolls from the oven and spread glaze evenly over top.

BREAD MACHINE CINNAMON BUNS WITH WALNUTS & RAISINS

This is a take on recipe #43744: Bread Machine Cinnamon-Pecan Buns, which I changed a little. The dough is so wonderful and rises incredibly, and the sauce - oh, the sauce! They're just packed with walnuts and raisins, too - a real treat! I've also added an optional drizzle, for those that must have icing on their cinnamon buns!

Bread Machine Cinnamon Buns With Walnuts & Raisins image

Steps:

  • Measure first 8 ingredients into bread machine (refer to your bread machine instructions for the proper order). Select the dough cycle.
  • Meanwhile, prepare syrup: Boil together butter, water and brown sugar for 1 minute.
  • Immediately, pour syrup into a 9 X 13 pan; tilt pan to cover bottom evenly.
  • Arrange walnuts, flat side up on syrup; scatter raisins on top.
  • When bread machine cycle is complete, remove dough from machine to a lightly floured surface. If necessary, knead in enough flour to make dough easy to handle.
  • Roll dough into a 12 X 18 inch rectangle. Brush with melted butter.
  • Sprinkle evenly with the mixture of brown sugar and ground cinnamon. Sprinkle chopped walnuts and golden raisins on top. Starting at large side, roll up jelly-roll fashion. Pinch edge to seal. Cut roll into 12 equal pieces. To avoid too much filling from escaping, I first cut the roll in half, then each half in half, and then each quarter in thirds. Place rolls flat over syrup.
  • Cover and let rise 30 minutes or until double in volume.
  • Remove cover and bake at 375 for 30-35 minutes, until golden brown.
  • Loosen edges and carefully invert onto serving tray.
  • To make icing: Mix icing sugar and cinnamon together; add maple syrup and 1 tbsp milk, mix. If needed, add more milk. Icing should be stiff - but not too stiff - and not too runny either. I like to leave the icing on the side to allow folks to decide to use it or not.
  • Enjoy!
