Gram would always send us a pan of her delicious bread pudding with her warm vanilla sauce...She put raisins in hers, while I leave them out for picky kid reasons...lol! By all means add some if you like...She would also plump up raisins and add them to the vanilla sauce....so, so good! Enjoy! My photos

Steps:
- 1. Preheat oven to 350 degrees F. Spray a 9x13 pan or dish with nonstick cooking spray. The deeper dish the better. Break bread into pieces or cube and place into prepared pan.
- 2. Beat sugar, eggs and milk and cream.
- 3. Pour over the cubed bread, pushing the bread down into the milk mixture, making sure all is covered.
- 4. Sprinkle with a generous amount of cinnamon.
- 5. Dot with pats of butter.
- 6. Bake for 45 - 50 minutes, or until a pick comes out clean and pudding is set. You many want to place some foil on stove bottom. Sometimes mine has leaked and made a smoky mess...
- 7. While baking...make your vanilla sauce. Don't skip this, as it is to die for... In a bowl, mix the corn starch with the sugar.
- 8. In a medium sauce pan, add the 1 cup of water, bring to a boil. Whisk in the sugar mixture and stir until thickened.
- 9. Turn off burner or remove from heat and stir in the vanilla and butter.
- 10. Stir until butter is melted.
- 11. Serve this delicious sauce over the warm bread pudding...absolutely delish!!! I usually serve with a dollop of whipped topping and a sprinkle of cinnamon.

My family LOVES bread pudding, and this recipe is one that I have fine tuned to their taste. I have to double this recipe, and bake it in a 9x13 inch pan for my family! It's great for breakfast or dessert and is delicious with milk poured on top! Enjoy!

- Preheat oven to 350 degrees F (175 degrees C).
- Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
- In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
- Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

SAVORY BREAD PUDDING
I love bread pudding, but in New Orleans they do savory ones to accompany meat-centric dishes. Not the lightest of fare, but the mushroom duxelles makes the day.

- Preheat the oven to 400 degrees F. Grease a 3-quart casserole dish with butter.
- Whisk the eggs, heavy cream, cognac and some salt and pepper in a large bowl. Place the bread slices into the egg-cream mixture and let sit for 5 minutes.
- Cut the mushrooms into large dice and add to food processor along with the shallots and process until finely, finely chopped. Put a large cast-iron pan over medium-high heat and add 4 tablespoons of the butter. Once the pan is heated, add the mushroom/shallot mixture and cook until browned, about 5 minutes.
- Turn the heat under a medium cast-iron pan to medium-high and add the oil. Once heated, add the sliced spring onion and sear until browned on both sides, about 5 minutes total.
- To assemble, first put a third of the bread in the prepared casserole dish, then half of the mushroom duxelles, half of the seared onion and another third of the bread. Press down and top with the remaining mushroom duxelles and onions. Top with the remaining bread and dot with the remaining 4 tablespoons butter. Put into the oven and bake until golden brown, about 15 minutes.
NOT YOUR GRANDMA'S BREAD PUDDING

- For the bread pudding: In a large bowl, whisk together the cream and eggs. Add the brown sugar, raisins, butter, cinnamon, ginger and 1 cup granulated sugar. Mix well. Gently stir the bread cubes into the egg mixture. Refrigerate for 1 hour.
- Preheat the oven to 350 degrees F and coat a 9-by-13-inch baking dish with cooking spray.
- Pour the bread mixture into the prepared baking dish. If desired, sprinkle the top with the remaining 2 tablespoons of sugar. Bake until a knife inserted into the middle comes out clean, 45 to 50 minutes.
- Meanwhile, for the bourbon sauce: Combine the confectioners' sugar, bourbon, butter, milk and cinnamon in a medium saucepan, bring to a simmer over low heat, whisking constantly until thickened and no longer watery, 2 to 3 minutes. Serve with the bread pudding warm, at room temperature or chilled.

GRAMMIES CARAMEL BREAD PUDDING
This is a tasty old fashioned recipe for bread pudding that belonged to my grandmother. Its not as soggy as most bread puddings which in my opinion makes it that much better and its easy- bonus!!!

- Pack sugar in a buttered casserole dish.
- Cut bread in small pieces and place buttered side down on sugar.
- Mix the egg, milk and vanilla together.

- Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
- Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
- Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
- Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
- Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
- Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

As my son says, it is like eating French Toast for dessert. :) It is very much like French Toast with a lovely caramel sauce on it. We all like it warm best. Make sure you use a 2-quart dish. Trust me, it will boil over in your stove in a 1 1/2-quart one. Oops! And don't worry, it will fall a little bit as it cools.
