Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in the flour, salt and 1/4 teaspoon pepper until blended; gradually add 3/4 cup milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat and set aside., In another large skillet over medium heat, cook potatoes in butter until tender. Whisk the eggs, garlic salt and remaining milk and pepper; add to skillet. Cook and stir until almost set., Press each biscuit onto the bottom and up the sides of 8 ungreased muffin cups. Spoon the egg mixture, half the cheese, and sausage into cups; sprinkle with remaining cheese., Bake at 375° for 18-22 minutes or until golden brown. Cool 5 minutes before removing from pan. Freeze option: Freeze cooled biscuit cups in a freezer container, separating layers with waxed paper. To use, microwave 1 frozen biscuit cup on high for 50-60 seconds or until heated through.

Steps:

  • Preheat oven to 375°F. Spray 2 (10-ounce) custard cups or soufflé dishes with cooking spray. In small bowl, beat eggs and water. Set aside. In each cup, place 1 tablespoon bacon bits. Top with 1 frozen biscuit, 2 tablespoons cheese and half of the egg mixture. Sprinkle with pepper. Place custard cups on cookie sheet with sides. Bake 24 to 27 minutes or until biscuits are golden brown. Sprinkle with remaining bacon. Serve immediately with salsa, if desired.

  • Preheat oven to 375°. Stir together biscuit mix and milk to form a soft dough. On a lightly floured surface, pat dough to 1/4-in. thickness; cut 12 biscuits using a floured 3-1/2-in. round cutter. Press each onto bottom and up sides of a greased muffin cup., Divide cheese, green pepper and ham among cups. Whisk together eggs, horseradish, salt and pepper; pour into cups. Sprinkle with rosemary., Bake until eggs are set, 20-25 minutes. Let stand 5 minutes before removing from pan.

Steps:

  • Open the biscuits (I used Grands, but others would do) and pull each apart into two halves. Press the dough into pre-sprayed muffin pans bringing up the edges to the top. The jumbo muffin size works well.
  • Mix other ingredients together and spoon into each biscuit.
  • Bake in 350 oven until golden brown.

1 lb sausage, browned and drained

  • Preheat oven to 400 degrees.
  • In a medium non-stick skillet, cook the sausage and onion over medium heat, about 5 minutes or until meat is done. Drain any excess grease.
  • Cook the scrambled eggs.
  • Add the cheese and sausage/onion mixture to the eggs.
  • Divide each biscuit in half by pulling apart the layers. Press each half into non-stick muffin tins coated with non-stick cooking spray. Divide the meat evenly into the prepared muffin tins. Bake for 10 minute.
  • To Freeze: cool baked cups to room temperature Freeze on baking sheet, then transfer to zip-top freezer bags.
  • To Prepare after Freezing: Preheat oven to 350. Defrost cups or place them frozen on a nonstick baking sheet. Bake for 10-15 min or until heated through OR.
  • Reheat in microwave approximately 1 minute.

Steps:

  • Make the biscuits: Position a rack in the center of the oven and heat the oven to 425 degrees. Butter a small baking sheet. (Keep the cubed butter cold.)
  • Whisk together the flour, sugar, baking powder and salt in a large bowl. Add the cold butter and toss to coat, then cut the butter into the flour using a pastry cutter or rub and pinch it in with your fingers until the mixture resembles coarse sand with no bits larger than the size of gravel.
  • Add the milk all at once and quickly stir with a fork until the dough comes together in a shaggy mass. Use the fork to scoop and drop 4 even mounds of dough onto the prepared sheet, spacing apart. Gently pat the tops and sides to form round pucks; it's OK if the tops are a little craggy.
  • Bake until golden brown, 20 to 23 minutes. Let cool on the pan on a rack while preparing the fillings.
  • Make the fillings: Beat the eggs in a medium bowl until well mixed but not frothy. Season very generously with salt and pepper and beat again. Heat a medium nonstick or well-seasoned cast-iron skillet over medium until hot, 2 to 3 minutes. Add the butter, turn the heat to low and swirl the butter to evenly coat the bottom of the pan. When the butter has melted about halfway, add the eggs all at once. Cook, stirring gently, until mostly set but still a little wet, 1 to 2 minutes, then spread in an even layer.
  • Once the bottom and edges are fully set, turn off the heat and cut the egg pancake in quarters using the spatula. Set a slice of cheese over each quarter. Slice each of the biscuits in half and spread jam on both halves. If you want bacon, sausage or ham, place them over the bottom halves.   • 1. Measure self rising flour and sugar. Mix with a fork.
  • 2. Using a pastry blender, cut the cold butter into the flour mix until it resembles a coarse meal.
  • 3. Add 4 Tbsp milk and blend with a fork just until blended. If too dry, add the other half a tablespoonful.
