SANTA FE CHICKEN
This recipe uses a method of cooking I call "steam-fry". It is cooked in the marinade so the chicken is infused with flavor. Healthy too!

- 1. Combine the first 9 ingredients in a shallow dish or storage bag; add the chicken. Cover and marinate in the refrigerator up to 30 minutes.
- 2. Place the chicken and marinade in a large nonstick skillet; bring the marinade to a boil.
- 3. Reduce heat and simmer, uncovered, foro 5 to 6 minutes or until the chicken is done. Sprinkle with chopped ciilantro.

- In a small saucepan, cook and stir onion in oil over medium-high heat until tender. Transfer to a blender. Add the green chiles, cilantro, jalapeno, jelly, bouillon, Worcestershire sauce, garlic, seasoned salt and oregano; cover and process until smooth., Return mixture to the same pan; cook over medium heat until heated through, stirring occasionally. Set aside and keep warm., Sprinkle steaks with salt and pepper to taste. Broil 4-6 in. from heat for 5-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Sprinkle steaks with cheese if desired; serve with green chile sauce.

FISH OR SEAFOOD - SANTA FE SALMON RECIPE

- Drain 1 (10 oz) can of diced Rotel tomatoes with lime juice and cilantro (drain well) ½ cup mayonnaise salt and pepper salmon to taste 1 ½ lbs salmon filets (4 boneless, skinless fillets) Drain 1 can of tomatoes with lime juice and cilantro well. Add ½ cup mayonnaise and mix together with spoon until it becomes pastelike. Lightly salt salmon and a little pepper (if desired). Coat filets with tomato mixture. Spray frying pan with Pam. Heat pan till medium hot and add salmon filets that have been covered on both sides with tomato mixture. Add remaining mixture to frying pan. Cook on medium heat 6-8 minutes, turning half-waya through cooking time. When salmon begins to flake it is done. Serve with rice, tossed salad and French Bread. It is delicious.
BONNIE'S HOMEMADE SANTA FE RUB
This is a great seasoning or rub to use when mixing hamburgers, meat loaf and meatballs. Use about 2 teaspoons of rub per pound of ground meat.

This is an adaptation of a recipe that I found on Dr. Weil's website. Great on the grill even though the original recipe called for broiling the meat. Cooking time includes marinating time.

- Place the chicken breasts in a shallow baking pan and pour the marinade over the top.

- Pound out each of the chicken breasts so that they are a fairly even thickness throughout. Marinate the chicken by combining the rice vinegar, soy sauce, sesame oil, brown sugar, red pepper flakes, ground ginger, and crushed garlic in a resealable plastic bag with the chicken breasts. Marinade for 30 minutes to an hour.
- Make the sauce by combining the mayo, paprika, cayenne, curry powder, and salt in a bowl and mixing it up.
- Grill the chicken for about 5-8 minutes each side. Actual time will depend on the thickness of your meat. The chicken is done when it is firm to the touch. Place the pepper jack slices on each piece of chicken during the last minute or so of cooking so it can melt.
