Steps:

  • Line the pie shell with 1 cup shredded mozzarella, cover with sausage.
  • Top with remaining 1 cup shredded mozzarella.
  • In a small bowl beat together the eggs and milk. Pour over the cheese layer. Sprinkle with the chives.
  • Bake 325' for approximately 40 minutes or until set. It may be necessary to prick the top layer with a fork to allow the egg to redistribute itself.
  • Cool for a few minutes before cutting.

BREAKFAST PIE

A recipe that came in an email from Taste of Home. Sounds like something I would love, so posting here for safe keeping. You can make the pie the night before to make for a easy morning meal. Update 6/23/2013: After having another chef try this recipe with bad results, I quickly got the ingredients to try it myself (and then make any corrections), which is why I posted it anyways!! Since it was only myself eating this time, I scaled it back for 2-3 servings and did use the shredded hashbrowns as did the previous reviewer, and it worked out perfectly. I only had mine in the refrigerator for a few hours, before baking it for my lunch. I really loved the crunchy topping from the cornflakes and bacon bits on top and next time might increase the amount of cornflakes, so good and really enjoyed the contrast of textures. After the crunchy topping you cut into a creamy tasty inside. I am leaving the recipe as I originally posted as it worked out wonderfully for me.

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 2 teaspoons drippings. Stir reserved drippings into cornflakes; set aside.
  • In a large bowl, combine the eggs, milk, cottage cheese, cheddar cheese, onion, salt and pepper until blended. Stir in hash browns. Pour into a greased 9-in. pie plate. Sprinkle with bacon and cornflake mixture. Cover and refrigerate overnight.
  • Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325° for 45-50 minutes or until a knife inserted near the center comes out clean. Let stand for 5-10 minutes before cutting.

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large, deep skillet over medium-high heat, combine sausage, onion and green pepper. Cook until sausage is evenly brown. Drain, crumble, and set aside.
  • Separate the dough into 10 individual biscuits. Flatten each biscuit out, then line the bottom and sides of 10 muffin cups. Evenly distribute sausage mixture between the cups. Mix together the eggs and milk, and divide between the cups. Sprinkle tops with shredded cheese.
  • Bake in preheated oven for 18 to 20 minutes, or until filling is set.

QUICK & EASY BREAKFAST PIE image

Steps:

  • 1. Preheat oven to 350 degrees. Open the tube of canned biscuits and place all of them in the bottom of a 9 inch glass pie pan. Press together with fingertips, pushing the dough up the side of the plate as much as you can. (After a few minutes, it will start to shrink back, so keep pushing it together and up the sides of the plate before you add the filling.)
  • 2. Fry diced bacon until cooked to your liking. (Or cook bulk sausage in loose pieces.) Drain most of the drippings off. Arrange meat in the bottom of the pie dish with your cooked hash browns (if you decide to use them) Break your eggs into a mixing bowl and whip until thoroughly blended. Pour this over the meat mixture in the pie dish. Remember the canned biscuits will rise a little, so be sure and do not over-fill the pie.
  • 3. Top evenly with shredded cheese. Place in preheated oven and bake uncovered 30 to 40 minutes... The edges of the biscuits should be browned. Using a toothpick, test for doneness. Remove from oven and cool about 10 minutes before slicing. Serve hot, or cool completely, slice and place slices in freezer bags. You can pull one out of the freezer at a time, and microwave it for your convenience as desired. (I recommend serving this with a delicious salsa of your choosing. I use ("La Costena" brand) green tomatillo salsa that isn't too spicy. This lends it a wonderful and savory Tex-Mex flavor!)
  • 4. As a side note... Feel free to add other ingredients, like carmelized onions with chunks of sweet bell peppers or spicy jalapenos, chorizo, etc.. You can also sprinkle some slices of black olive on top... Use your appetite and imagination to make this suit your own taste. Buen Probecho, Y'all!! Enjoy!

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook sausage, bell pepper and onion over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate.

  • Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed.   • Combine melted butter and hash browns. Press into the bottom and sides of a greased 10" pie dish. Sprinkle potatoes with salt, pepper. (I also use Tony's on the potatoes) Bake at 350 for 30 minutes or until edges are lightly browned.

  • In large bowl combine cottage cheese, eggs, chedder cheese with sausage mixture.
