CANADIAN BACON ONION QUICHE
For more than 20 years, we sold our homegrown specialty onions at the farmers market. I handed out this favorite recipe for a classic quiche to all our customers. -Janice Redford, Cambridge, Wisconsin

- Preheat oven to 350°. In a small bowl, mix flour and 1/4 teaspoon salt; cut in 1/2 cup butter until crumbly. Gradually add cottage cheese, tossing with a fork until dough holds together when pressed. Shape into a disk., On a floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge., In large skillet, heat remaining butter over medium heat. Add onions; cook and stir until golden brown. Stir in Canadian bacon, pepper and remaining salt. Remove from heat; add eggs and cheddar cheese. Pour into crust., Bake on a lower oven rack 40-45 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

- Preheat oven to 400°F. Prepare pie crust as directed on pkg. for unfilled 1-crust pie, using 9-inch pie plate sprayed with cooking spray. Arrange Swiss cheese pieces evenly on bottom of pie crust; top with the Canadian bacon.
- Beat eggs and milk with wire whisk until well blended; pour into crust. Sprinkle with onions and shredded cheese; top with tomato slices.
- Bake 15 min. Reduce heat to 350°F; continue baking 25 to 30 min. or until center is set and top is lightly browned. Let stand 10 min. before cutting into 6 wedges to serve.

- Place Canadian bacon slices, slightly overlapping, around the side and the bottom of a 9 inch deep dish pie plate, coated with cooking spray.
- Set aside.
- Combine eggs, mayonnaise, pepper, Parmesan cheese, Brie, and Italian herb seasonings.
- Pour into pie plate over bacon and bake at 375ºF for 30 minutes.
- After 15 minutes of baking, place foil over bacon to protect it from overcooking and drying out.

Steps:
- Arrange bacon slices on bottom and up sides of a lightly greased 9" pie plate or quiche dish, slightly overlapping slices. Set aside.
- Remove and discard rind from Brie, and cut cheese into cubes.
- Stir together cubed Brie, eggs, and next 4 ingredients in a bowl. Pour mixture into prepared pieplate.
- Bake at 375 degrees for 30-35 minutes or until knife inserted in center comes out clean. Let quiche stand 5 minutes before serving.
