CAIPIRINHA
It doesn't get simpler or more refreshing than a classic caipirinha, which is the national cocktail of Brazil. The sweet-tart drink calls for just three ingredients: lime, sugar, and cachaça, a sugarcane liquor that's like a smokier version of rum.

- Cut lime into 6 wedges. Squeeze the wedges into an old-fashioned glass, then add wedges. Add cachaça and sugar; use a spoon to muddle. Fill glass with ice, then stir well to chill.

- Place the lime pieces, pulp side up, in the bottom of an old fashioned glass or heavy tumbler. Add sugar to taste and crush the lime and sugar together with a pestle or the end of a wooden spoon (be sure to crush the pieces pulp side up or too much bitter lime oil will be released from the zest). Add the cachaca, stir to mix and add the ice cubes. Stir again and serve.

- Place the pieces of citrus and the sugar in the bottom of a pitcher. Using a muddler or the handle of a wooden spoon, crush and mash the fruits to release the oils and juice from the rind. When you have some nice juice in there and the sugar begins to dissolve, add the liquor and stir to combine. Fill lowball glasses with ice cubes and pour the cocktail over the ice. Do not remove the pieces of crushed fruit. Garnish with mint and lime. Use fresh sugarcane sticks as stirrers, if desired.

- In a saucepan over medium heat, stir together the water and sugar. Simmer until sugar has melted completely. Remove from heat and set aside to cool.
- Wash the lime gently under water and dry. In a large pitcher, pour in the cooled sugar syrup, 5 lime wedges and muddle gently to crush the fruit but not release too much of the oils from the skin. Add ice and cachaca, and stir. Serve in a large glass garnished with a lime wedge.

- Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup - you can also do this with a large pestle and mortar. Discard the lime peel.
