Brie, Redcurrant, and Watercress Toastie image

Steps:

  • Preheat the sandwich toaster to its highest setting.
  • Slice the Brie and cover one of the pieces of bread with it. Spread over the redcurrant jelly and sprinkle on the watercress leaves. Add a twist of black pepper and cover with the second slice of bread. Place the sandwich in the toaster (Brie side uppermost), close the lid, and cook for 3 minutes until crisp and golden.

I make no apologies for the apparent simpleness of this. It make a quick easy brunch or light lunch. Serve with a dressed green salad. Cranberry jelly and mango chutney also work very well as variations.

  • In a large bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in the milk and lemon zest. Combine flour and baking powder; gradually add to the creamed mixture and mix well. Stir in currants., Transfer to a greased 9x5-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Brie, Lemon Curd, and Blueberry Bites image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a mini muffin tin with cooking spray and set aside.
  • Unroll thawed puff pastry sheet on a lightly floured work surface. Roll into a large rectangular sheet, and using a pizza cutter or knife, cut into 24 equal pieces. Press each piece into a muffin cup, and use a fork to prick the bottom several times.
  • Cut Brie cheese into 24 small cubes, and place a cube into each muffin cup. Top each with about 1/2 teaspoon of lemon curd.
  • Place muffin tin in the preheated oven and bake until the pastry is puffed and the corners turn golden brown, 12 to 14 minutes.
  • Remove from the oven and cool in the pan for about 5 minutes. Remove bites to a serving plate, top each with a blueberry, dust with confectioners' sugar, and garnish with a small mint leaf, if desired.
  • Enjoy warm or at room temperature.
