Brie, Pear, and Walnut Braid Recipe image

Steps:

  • Preheat oven to 450o F Heat oil and butter in a fry pan. Add onion and sugar and cook until onions are golden brown - about 20-30 minutes. Stir in cranberries and walnuts and remove from heat. Set aside. Roll pastry into 12" x 9" rectangle and spread mustard along the middle third. Spoon onion mixture over mustard. Top with brie and pear. Make 1" diagonal slices along both sides of pastry. Alternating sides, fold strips over centre brushing each slice with egg. Brush top with egg. Transfer to parchment lined baking sheet. Bake 25 minutes until pastry is golden.

1/2 pkg puff pastry
2 tbsp. Chopped dried cranberries
1 tbsp olive oil
2 tsp. Dijon mustard
1 tsp unsalted butter
4 oz. Brie, thinly sliced
1 onion, sliced
1 pear, peeled and thinly sliced
1 tsp sugar
2 eggs, beaten
1/4 cup chopped toasted walnuts

Steps:

  • Preheat oven to 450 F. Place parchment paper on a baking sheet.
  • In a large, flat bottomed fry pan, heat oil and butter over medium heat. Add onion and sugar, stirring occasionally for 20 to 30 minutes or until caramelized and golden brown. Stir in walnuts and cranberries Remove from heat and set aside.
  • On a lightly floured surface, roll out pastry into a 12 x 9 inch rectangle. Spread the mustard along the middle third of the pastry. Spoon onion mixture over mustard. Top with Brie and pear slices.
  • Starting at the left top corner of the outside long edge of pastry, make diagonal cuts 1 inch apart, almost to the filling. Repeat on the right side in the opposite direction. Alternating strips from side to side, fold over filling to resemble a braid, brushing each strip with beaten egg to secure. Brush top with beaten egg.
  • Transfer to baking sheet and bake for 25 minutes until pastry is golden and pear is tender. Cool slightly before cutting into pieces.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a jelly roll pan with parchment paper.
  • Arrange tart shells onto prepared pan. Put a piece of Brie cheese into each shell. Sprinkle diced pear and a couple thyme leaves into each shell and drizzle with honey.
  • Bake in preheated oven until cheese is melted and tarts are golden, 12 to 15 minutes.

Giant Baked Brie with Apricots and Walnuts image

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Melt the butter in a small skillet over medium heat. Add the walnuts and cook, tossing occasionally, until lightly toasted, 1 to 2 minutes. Add the thyme, season lightly with salt and toss. Stir in the brandy and remove from the heat. Transfer to a small bowl and stir in the dried apricots and preserves. Let cool to room temperature.
  • Place the Brie on the center of the prepared baking sheet and cut off the rind on top. Spread the apricot compote evenly over the top of the Brie.
  • Unroll the puff pastry sheets on a floured work surface. Brush a 2-inch strip down the long edge of one sheet with the egg and line up the second sheet with the first, overlapping the edge brushed with egg so that the two stick together. Flour the pastry well and roll with a floured rolling pin to make a 14-inch square. Trim the corners from the pastry to make a circle (you want to make the largest circle possible). Reserve the trimmings. Transfer the pastry to the baking sheet and cover the Brie. Tuck the edges underneath the Brie.
  • Reroll the pastry scraps and cut out five or six 2-inch leaf shapes, then score them with the back of a butter knife to create simple veins in the leaf. Brush the pastry-wrapped Brie with the egg. Arrange the leaves decoratively on top of the Brie and brush with the egg.
  • Bake the brie until the pastry is puffed and deep golden, about 40 minutes. Let stand about 20 minutes before serving with apple and pear slices and crackers.

Baked Brie with Caramelized Pears, Shallots and Thyme image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium heat. Add shallot; cook and stir for 1 minute to soften. Add thinly sliced pears; cook until soft, about 5 minutes. Pour in white wine, brown sugar, thyme, salt, and pepper; increase heat to medium-high and simmer until the liquid has evaporated, and the pears have lightly caramelized, about 10 minutes. Set aside.
  • Cut a Brie-sized hole in the top of the sourdough bread to within 1/2-inch of the bottom. Cut the removed bread into pieces for serving, set aside. Score the Brie around it's edge, using a paring knife to cut 1/4-inch deep. Cut in half by looping an 18-inch piece of very thin string, or unflavored dental floss around the scored Brie and pulling the ends in opposite directions.
  • Place the bottom half of the Brie, cut-side-up, into the sourdough loaf. Top with 1/2 of the pear mixture and sprinkle with 1/2 of the slivered almonds. Place the remaining brie half on top, spread with remaining pear mixture, and sprinkle with remaining slivered almonds. Place on a baking sheet.
  • Bake in preheated oven for 45 minutes or until soft and gooey. Serve with sliced sourdough bread and crackers.

  • To make the conserve: 1. Heat the butter in a heavy pan over medium heat until it begins to foam 2. Add the pears and cook stirring for 2 - 3 minutes, until the pear is tender 3. Stir in the brown sugar, dried cranberries, walnuts and spices 4. Continue cooking for 10 minutes, then set aside and cool to room temperature To make the brie: 1. Put Brie on a work surface and with a 2-inch round cutter cut out 10 rounds 2. On a lightly floured surface unfold 1 pastry sheet (do not roll out pastry) and with a 2 1/4-inch round cutter cut out 10 rounds 3. Unfold remaining 3 pastry sheets and with a 5-inch round cutter cut out 10 rounds 4. On cleaned work surface arrange 1 large pastry round and brush top with some egg. Center 1 cheese round on pastry and wrap pastry up over cheese to form a 3/4-inch border on top of cheese. Brush border with some remaining egg and top with 1 small pastry round, pressing edges of dough together gently but firmly to seal. Brush round with some remaining egg and chill on a baking sheet.
