Broiled Mackerel with Onion and Pickle Butter image

Steps:

  • Preheat broiler. Oil a large shallow baking pan.
  • Stir together onions, pickles, mustard, butter, 1/4 teaspoon salt, and 3/4 teaspoon pepper in a small bowl.
  • Arrange fish, skin sides down, in baking pan and sprinkle with remaining 1/4 teaspoon salt and 3/4 teaspoon pepper. Spread butter mixture on fish and broil 5 to 6 inches from heat until fish is just cooked through, 4 to 6 minutes.

8 pickled cocktail onions, finely chopped
1/4 cup finely chopped mixed sweet pickles or dill pickle
4 teaspoons country-style Dijon mustard
1/2 stick (1/4 cup) unsalted butter, softened
1/2 teaspoon salt
1/4 teaspoon black pepper
6 (4- to 6-oz) pieces mackerel fillet with skin
Accompaniment: lemon wedges

This is a recipe that my father used to make for the two of us many years ago. My mother would make something different for my brother & herself. Trust me, this is a GREAT TASTING RECIPE!

MACKEREL (Broiled Boston or Atlantic Mackerel) image

Steps:

  • Have your fish monger clean& split for broiling, or buy fillets.
  • Preheat broiler to 450 degrees.
  • Brush fish with olive oil on both sides.
  • Place fish, skin side down, on a greased broiler rack, 2” below the heat.
  • Broil 5 minutes, then turn the fish& broil the other side for 3 minutes.
  • While the fish broils, melt the butter.
  • Mix the melted butter with salt, pepper, lemon juice, garlic powder, onion powder,& parsley.
  • Place the fish on a warmed serving platter,& pour the butter sauce over the fish.
  • Sprinkle lightly with paprika& serve at once.

3 lbs Boston mackerel or 3 lbs Atlantic mackerel
2 tablespoons extra virgin olive oil
2 tablespoons butter (not margarine)
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons lemon juice
3 tablespoons finely cut fresh flat-leaf parsley
1 teaspoon granulated garlic powder
1 teaspoon onion powder or 1 teaspoon minced onion
1 dash paprika

PICKLED MACKEREL

The chef Kyle Connaughton's recipe for pickled mackerel is straight out of the Japanese playbook. It's simple and foolproof to prepare, and the time it takes is mostly unattended. He serves it plain or over rice that's been dressed with some cucumber and toasted sesame seeds. I also tried seasoning the rice with a couple of spoonfuls of the leftover vinegar marinade plus grated ginger, black sesame seeds, minced scallions and diced avocado, and Mr. Connaughton seconded that idea, as well as the notion of serving the pickled fish Scandinavian-style, with sour cream, sweet onions and boiled potatoes.

Pickled Mackerel image

Steps:

  • Remove any pin bones from the fish. Place fish in a dish or nonreactive pan with sides, and dust fish on both sides liberally with salt, about 1/3 cup, covering it completely. Refrigerate for 1 hour.
  • Combine 1 cup of the vinegar with the kombu and sugar in a small saucepan and simmer until the sugar has dissolved. Remove from heat and let steep for 3 minutes. Add remaining vinegar.
  • Remove fish from refrigerator, rinse off the salt with cold water and pat fish dry. Rinse dish and return fish to the dish. Discard kombu and pour vinegar mixture over fish so it is completely submerged, cover dish and refrigerate for 1 hour.
  • Remove fish from vinegar mixture, pat dry, wrap in plastic wrap and refrigerate 12 hours or longer before slicing.
  • To serve: Rinse rice thoroughly and drain. Place in a saucepan with 1 cup cold water. Bring to a boil, reduce heat, cover and cook about 15 minutes, until all the water is absorbed. Remove from heat and set aside 10 minutes, still covered. Uncover and allow to cool to room temperature.
  • While rice is cooking, lightly toast sesame seeds in a small dry skillet. Fold sesame seeds and cucumber into cooked rice. Season to taste with salt.
  • Place the rice in a mound on a serving dish or divide among 4 individual plates. Slice mackerel in half lengthwise, then cut each section into 8 pieces and arrange against the rice. Serve.

Salt-Broiled Mackerel image

Steps:

  • Slash the skin side of the fish about 1/4-inch deep, at 1-inch intervals. Put it on a rack set over a sink or bowl and sprinkle liberally with salt on both sides (you should use at least 1 teaspoon per side for each fillet). Let rest for 30 minutes.
  • Heat the broiler, with the heat source within 4 inches of the broiling rack. Put a grate or rack on a sturdy pan (lined with aluminum foil, if you like, to ease cleanup) and heat it for about 5 minutes. Rinse the fillets and pat them dry.
  • When the pan is hot, put the fillets on the rack, skin side up. Broil, carefully turning once about 3/4 of the way through cooking, until the fish is opaque and the tip of a knife flakes the thickest part easily, no more than 10 minutes. Carefully remove the fillets with a spatula and serve, skin side up, with lemon wedges and soy sauce.

Steps:

  • Put fillets, skin sides down, in a lightly oiled large shallow baking pan. Stir together ginger, garlic, lime juice, oil, salt, chili powder, and turmeric in a small bowl until combined well, then rub onto mackerel flesh and marinate 10 minutes.
  • Preheat broiler. Broil mackerel 5 to 6 inches from heat, without turning, until cooked through and lightly browned, 7 to 8 minutes. Transfer to plates with 2 spatulas and top with cilantro.

Broiled Mackerel Fillets With Tomato-Caper Sauce image

Steps:

  • Preheat the broiler to high.
  • Place the mackerel fillets on a flat dish and sprinkle them with salt and pepper. Brush the fillets with 2 tablespoons of the olive oil and sprinkle the thyme evenly over the fillets. Set aside.
  • Place the tomatoes in boiling water for about 10 seconds. Drain and pull away the skin. Cut away the core and discard. Cut the tomatoes crosswise and then cut into small cubes. Set aside.
  • Heat the remaining oil in a saucepan over medium-high heat. Add the onion and cook, stirring, until wilted. Add the garlic, turmeric, capers, lemon juice and rind, tomatoes, cayenne, salt and pepper. Cook, stirring, 3 minutes. Set aside and keep warm.
  • Place the mackerel fillets skin side up under the broiler and cook about 3 minutes. Carefully flip the fillets and cook another 3 to 4 minutes until the fish is cooked through.
  • Transfer the fillets to a warm serving plate and spoon equal portions of the tomato-caper sauce over them. Sprinkle with parsley and serve immediately.

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Lightly grease a baking dish.
