BROKEN LASAGNA WITH ZUCCHINI-TOMATO SAUCE

- Bring a large pot of salted water to a boil. Meanwhile, toss the zucchini with 1/2 teaspoon salt in a colander set over a large bowl. Let stand 10 minutes, then gently squeeze out the excess moisture.
- Add the pasta to the boiling water and stir vigorously to prevent it from sticking. Cook until al dente, about 12 minutes. Reserve 1/2 cup of the cooking water, then drain the pasta.
- Meanwhile, heat the butter in a large skillet over medium-high heat. Add the cherry tomatoes and cook until blistered and slightly softened, about 4 minutes. Stir in the zucchini and lemon zest and cook, lightly crushing the tomatoes with a wooden spoon, until the zucchini is crisp-tender, about 4 minutes. Season with salt and pepper.
- Transfer the zucchini-tomato mixture to a large bowl. Add the pasta and cheese and toss. Stir in half of the chives and about 1/4 cup of the reserved cooking water, adding more to loosen, if needed. Season with salt and pepper. Divide among bowls and top with more cheese and the remaining chives.

Much easier to make than the traditional layering process, this dish is a dream: rich, simple and delish. And with three pounds of greens, it's full of iron and vitamins.

- Preheat the oven to 375F.
- Melt the butter in a medium pot over medium heat. Sprinkle the flour over the melted butter, whisk to combine, and cook for about 1 minute. Slowly whisk the milk into the butter-flour mixture, season with salt, pepper, and nutmeg, and cook for a couple of minutes to thicken. Stir in half the Parmigiano (about 3/4 cup). Set the sauce aside.
- Heat the EVOO in a large cast-iron skillet over medium-high heat. Toss in the cracked clove of garlic and cook for a minute or two to release its aroma and flavor. Add the chard and cook, turning occasionally to wilt down, 2 minutes. Add the spinach a few handfuls at a time, wilting each batch before adding more. Season the greens with salt and pepper.
- Break the pasta sheets into large pieces. Toss them into the pan with the greens and give them a good stir to incorporate them. Pour the sauce into the skillet, stirring again to incorporate everything evenly. Smooth the top down and sprinkle the remaining 3/4 cup Parmigiano into the skillet. Cover the skillet with foil, transfer to the oven, and bake the lasagna for 30 minutes. Remove the foil from the pan and let it finish cooking uncovered for about 15 more minutes to brown the cheese.

- Break each noodle into 3 or 4 rough squares and add to a large pot of boiling generously salted water. (It's okay if a few smaller pieces break off in the process; add them to the pot too, along with any stray shards at the bottom of the box.) Cook, stirring occasionally and adding snow peas and shelled peas for the final 2 minutes, until al dente, 8-12 minutes. Drain pasta and peas, reserving 2 cups pasta cooking liquid.
- Meanwhile, combine lemon zest and juice, Parmesan, butter, and 1½ tsp. pepper in a large bowl. Add pasta, peas and 1 cup reserved pasta cooking liquid and toss, adding more pasta cooking liquid as needed if mixture looks dry, until Parmesan and butter are melted and noodles are well coated. Add sugar snap peas; toss again just to combine.
- Divide pasta among shallow bowls and top with shaved Parmesan and cracked pepper.
BROKEN LASAGNA WITH PARSLEY PESTO, LETTUCE AND POTATOES

- Preheat the oven to 400 degrees F. Spread the walnuts on a baking sheet and toast in the oven until golden, about 5 minutes. Let cool slightly. Meanwhile, bring a large pot of salted water to a boil.
- Puree the olive oil, parsley, garlic, lemon zest, lemon juice and 1/4 teaspoon salt in a food processor or blender until smooth. Add the gruyere, olives and toasted walnuts; pulse until coarsely chopped, about 1 minute. Transfer the pesto to a large bowl.
- Add the potatoes to the boiling water and cook until tender, about 8 minutes. Remove with a slotted spoon and transfer to the bowl with the pesto.
- Add the pasta to the boiling water and cook until al dente, 10 to 12 minutes, adding the lettuce during the last 1 minute. Reserve 1/2 cup cooking water, then drain the pasta and lettuce and transfer to the bowl with the pesto. Toss to coat, adding enough of the reserved pasta cooking water to loosen the sauce.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Sprinkle with salt and 1/4 teaspoon pepper; set aside. , In a large bowl, combine the pasta, 3 cups mozzarella cheese, cottage cheese, eggs, Parmesan cheese, parsley and remaining pepper. Transfer to a greased shallow 3-qt. or 13x9-in. baking dish. Top with beef mixture and spaghetti sauce (dish will be full). , Cover and bake at 350° for 45 minutes. Sprinkle with remaining mozzarella cheese. Bake, uncovered, until bubbly and cheese is melted, 15 minutes longer. Let stand for 10 minutes before serving. Freeze option: Sprinkle casserole with remaining mozzarella cheese. Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary until heated through and a thermometer inserted in center reads 165°.

- Using a large, deep skillet or pan, heat the olive oil over medium-high heat. Add the onion and let cook for about 3 to 4 minutes. Add the garlic and mix together for about a minute. Add the ground beef and the sweet Italian sausage and cook until all of the meat is browned, about 6 to 8 minutes. Drain the fat from the pan.
- Add the tomato sauce, crushed tomatoes, sugar and Italian seasoning and stir together until everything is combined. Bring everything to a boil, and then turn the heat low. Let simmer for about 25 to 30 minutes. Taste and season with salt and pepper as needed.
- While your sauce is simmering, bring a large pot of salted water to a boil; add the broken lasagna pasta, a handful at a time. Cook for about 10 minutes, stirring frequently, or until al dente. When the sauce is ready, add the cooked broken pasta directly into the pan and carefully toss together. Sprinkle on some fresh basil leaves, serve and enjoy!

- 1. Heat the oven to 425 F. In a 9- by 13-inch baking dish, pour in the crushed tomatoes, 2 teaspoons salt, garlic, red pepper flakes, harissa, if using, and 2 tablespoons olive oil; stir well to combine. Break up the lasagna noodles and submerge them as best you can in the sauce.
- 2. Cover tightly with foil and bake in the oven for 25 minutes, until the noodles are tender to the bite. Remove, season to taste with salt, then stir in the spinach, mix in half the Parmesan and half the mozzarella. Layer the remaining Parmesan and mozzarella on top.
- 3. Bake in the oven, uncovered, until the mozzarella is melted and the sauce bubbling, about 20 minutes more. Drizzle with oil, more cheese, the herbs and serve.
