BROWN SPANISH RICE

I like to use brown rice whenever possible, but Spanish rice recipes seem to all call for white. This recipe is the result of many attempts to come up with an easy yet spicy (Tex-Mex) version.

Brown Spanish Rice image

Steps:

  • Bring chicken broth, tomatoes, and salt to a boil in a medium saucepan; add rice. Cover, reduce heat to medium-low, and simmer until rice is cooked and liquid is absorbed, about 1 hour. Stir before serving.

Spanish Brown Rice image

Steps:

  • Combine rice and garlic in a saucepan. Stir in water, salsa, and diced tomatoes. Bring to a boil.
  • Stir rice mixture and reduce heat to low. Simmer, covered, for 50 minutes. Turn off heat and allow rice to sit, covered, for an additional 5 to 10 minutes. Stir rice before serving.

  • Heat the oil over in a medium-sized pot over medium-high heat. Add the rice, onion, and bell pepper and cook, stirring frequently, until the vegetables are slightly tender and the onions are translucent, about 5 minutes.
  • Stir in the garlic, drained diced tomatoes, salt, chili powder, and broth. Reduce the heat to a low simmer and cook until fluffy, about 45 minutes. Fluff with a fork. Taste for seasoning and serve hot. PRO TIP: Feel free to substitute white rice instead of brown. This will cook faster and is more "restaurant style." Just make sure you adjust the ratio of liquid according to the package directions, as well as the cooking time.
