FILLET BUBBLY BAKE

My first job was as a stenographer for the N.S. Fish Packers Association and at the time they were promoting using frozen fish fillets in meals. They gave away free fish recipes on laminated cards to anyone that requested them by mail. Here is one that I use over & over again as it is quick, easy and tastes really good.

Fillet Bubbly Bake image

Steps:

  • Cut the frozen fillets in four portions.
  • Place in a shallow greased casserole.
  • Mix the mushroom soup, onion, lemon juice and water and pour over the fillets.
  • Top with grated cheese (I sometimes use a bit more than 1/2 cup).
  • Bake in hot over (450 degrees) for 20 minutes or until done.

1 lb frozen fish fillet (I use haddock)
1 (10 ounce) can cream of mushroom soup
2 tablespoons chopped onions
1 tablespoon lemon juice
1/2 cup grated cheese
3 tablespoons water

Steps:

  • 1. Heat oven to 400°. Melt 4 tbsp. butter in a 4-qt. saucepan over medium-high heat. Add mushrooms, garlic, celery, bell pepper, and onion; cook, stirring occasionally, until soft, about 8 minutes. Add wine; cook until liquid is reduced by half, about 3 minutes. Add flour; cook, stirring until smooth, for 2 minutes. Whisk in milk and cream; bring to a boil. Reduce heat to medium; cook until slightly thickened, 3-4 minutes. Stir in lobster, haddock, scallops, lemon juice, mustard, salt, and pepper. Divide mixture evenly among six 6-oz. ramekins; place ramekins on a baking sheet and set aside. 2. Mix bread crumbs, cheese, and paprika in a bowl; sprinkle mixture evenly over each ramekin and dot with remaining butter. Bake until lightly browned and bubbling in the center, about 20 minutes. Sprinkle with parsley, if you like.

6 tbsp. unsalted butter
2 oz. white mushrooms, finely chopped
2 cloves garlic, finely chopped
1 stalk celery, finely chopped
½ small green bell pepper, stemmed, seeded, and finely chopped
½ small yellow onion, finely chopped
½ cup dry white wine
4 tbsp. flour
1½ cups milk
½ cup heavy cream
4 oz. cooked lobster meat, cut into 1" pieces
4 oz. skinless haddock, pin bones removed, cut into 1" pieces
4 large sea scallops, thinly sliced crosswise
1 tbsp. fresh lemon juice
½ tsp. dry mustard
Kosher salt and freshly ground black pepper, to taste
⅓ cup fine bread crumbs
3 tbsp. grated cheddar cheese
1 tsp. paprika
Roughly chopped parsley, for garnish (optional)

Broccoli-Mushroom Bubble Bake image

Steps:

  • Preheat oven to 350°. In a large skillet, heat oil over medium-high heat. Add mushrooms and onion; cook and stir until tender, 4-6 minutes., Cut each biscuit into 8 pieces; place in a greased 13x9-in. baking dish. Top with mushroom mixture., Cook broccoli with cheese sauce according to package directions. Spoon over mushroom mixture., In a large bowl, whisk eggs, milk and seasonings; pour over top. Sprinkle with cheese. Bake until golden brown, 25-30 minutes.

Enchilada Bubble Bake image

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish or pan with cooking spray.
  • In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink. Drain, if necessary.
  • Meanwhile, separate each can of dough into 10 biscuits. With pizza cutter, cut each biscuit into quarters.
  • In large bowl, stir together beef, beans, enchilada sauce and tomato sauce. Stir in biscuit pieces. Spread mixture evenly in baking dish. Sprinkle cheese over top.
  • Bake 25 to 30 minutes. Let stand 5 minutes before serving.
